Red Pepper Hummus

We are having a great visit right now with Jaymie and Nik! He is such a cutie, and his cousins adore him (I think he kinda likes them too)!

Anyways, having company always leads to me to cooking something. Jaymie loves hummus so I made a quick batch of this super easy, absolutely delicious Roasted Red Pepper Hummus (it’s got a nice kick to it too)! Enjoy!

Red Pepper Hummus

Ingredients:

  • 15 oz can garbanzo beans, drained
  • 4 oz jar roasted red peppers
  • 3 Tbsp lemon juice
  • 3 cloves garlic, pressed
  • 2 Tbsp tahini
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp cayenne pepper
  • 1 Tbsp chopped fresh parsley

Directions:

  1. In food processor, puree the beans, red peppers, tahini, lemon juice and seasonings. Process until smooth and slightly fluffy. Refrigerate at least one hour before serving, sprinkle with parsley.
