Peanut Butter Cup Blondies

These are so rich and delicious you must make them to understand. They bake up all fluffy, then while it cools the center falls and becomes all gooey and delicious. The edges give the appearance that they are going to be all hard and crusty…but no my friends, they are actually chewy with a rich butterscotch flavor. I topped my blondies with miniature white chocolate peanut butter cups. Loved them!

Now I’m off to find another pumpkin recipe. Happy weekend everyone!

Peanut Butter Cup Blondies

by Shugary Sweets
Prep Time: 10 minutes
Cook Time: 30-35 minutes

Ingredients (24 bars)
  • 3/4 cup butter
  • 2 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 1/2 cup flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 12 oz pkg Reese’s miniature white chocolate peanut butter cups, chopped
Instructions
Beat butter, sugar and eggs. Add in vanilla extract. Mix in the flour, baking powder and salt.
Press dough into a parchment paper lined 13×9 baking pan. Top the dough with the chopped peanut butter cups.
Bake in a 350 degree oven for 30-35 minutes. Let cool completely. Enjoy!

You had me at peanut butter cup:-) But I had to laugh at the “off to find another pumpkin recipe” comment…last night I pulled out about 5 that I want to make. Can you say obsessed? Have a great weekend.

These look absolutely gorgeous – I just luuuuuuuurve Peanut Butter :)

However, I wonder if you could help me?
Being in the UK I have a total non-understanding of ‘cups’ (and ‘sticks’)! Do you literately push the butter into a cup until it’s 3/4 full…and how big should the cup be? I appreciate that as long as you use the same sized cup for each ingredient the proportions would be right – but what about the eggs…if I use a BIG cup shouldn’t I then use 3 eggs????????
I do hope someone can help me and maybe point me in the direction of an on-line conversion table – I have looked but have failed to find one and I have a huge file full of recipes I’d love to try :(

I have a craft Blog that you can use to tell me how stupid I am …….oh, I mean tell me what the weight would be in ounces/grammes or point me in the direction of a conversion table ;)
