I joined a gym today. I realized doing P90X in my basement isn’t going to cut it anymore. See, I have a problem. I go downstairs, start the video, conveniently forget to bring water, go back upstairs for water, and never return to the video.
So today, I decided it’s time to go join a gym again. I worked out for a little over an hour. I’m talking a good workout, a painful workout. Then I came home and decided I didn’t have enough pumpkin in my life. So I made you this lovely dessert (while munching on 3 pumpkin biscotti).
Here’s the bigger problem in my story. Remember the story yesterday, and my husband admitting he doesn’t love pumpkin? Well, I went and made more pumpkin desserts today. Why? WHY? I made an attempt to get healthy this morning, and now I’m ruining it by eating a big bowl of this pound cake. Which by the way is pretty amazing.
But don’t worry about me. I made an appointment today to work out with my free personal trainer for the day. I wonder if he likes pumpkin?

For the Pound Cake:
- 1 1/2 cup butter, softened
- 2 3/4 cup sugar
- 6 eggs
- 2 tsp vanilla extract
- 3 cup flour
- 1 tsp cinnamon
- 1/4 tsp ground nutmeg
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 3/4 cup canned pumpkin puree
For the Caramel Sauce:
- 1 cup brown sugar
- 1/2 cup heavy cream
- 1/4 cup corn syrup
- 2 Tbsp butter
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1/2 cup walnuts, chopped

Ooooh that looks amazing! This may be a silly question but is the canned pumpkin puree just pumpkin or does it have other ingredients? I am in the UK and you don’t get it here but I do have a couple of pumpkins ready to roast and then puree!

Alison, it’s just 100% pure pumpkin. I’ve always wanted to try my hand at roasting a pumpkin, just seems like so much work
But, if I didn’t have any other options I would totally be doing that too to get my pumpkin fix!

Yea P90X wasn’t doing it for me either…but I actually read the booklet that came with it and it says it isn’t for weight loss. So here I spent all that time for nothing! Hope the gym works out better for you…and I hear pumpkin helps your muscles recover faster;-)
Jocelyn, It could be I was taking in a few more calories that I burned. Not sure, but that’s what I’m thinking! At least going to the gym gets me out of the house for an hour (although there is a new frozen yogurt place next to the gym, nice!!)
my gosh, pumpkin with walnut sauce? i really… fall pumpkin recipes are clearly also going to be my downfall. especially as i do not have a trainer.

I’m not usually a huge fan of pumpkin (WHAT?! I know, I know..), but this looks quite delicious, and decadent without being pretentious. Yum.
I have similar workout issues when I try to exercise at home. I could use a free personal trainer…preferably an attractive, young, single male one…haha!
Scrumptious as always! I know what you mean…I bake bake bake and then eat eat eat. My diet lasts until about 9am each morning.

This recipe is definitely a must try! Who doesn’t luv pound cake and then add pumpkin to it? Sounds delish. The caramel walnut sauce sounds versatile too…may have to give that a try on other desserts too!
