No Bake Apple Pie Cheesecakes

Who loves an easy dessert? 

Yeah, sometimes it’s necessary. Sometimes you have a hectic week filled with doctor appointments, dentist visits, swim practice, guitar lessons, soccer practice and softball games (and that is just my Monday).

Sometimes you just need an easy dessert! 

These cute little desserts were whipped up in no time! Especially since I used Crunchpak apples! All I had to do was peel the sliced apples, give them a rough chop and I cooked them in a little skillet with some butter and seasonings for just a few minutes to soften them and infuse the flavors!

I couldn’t resist adding some little apple pie crusts to the top too (that are sprinkled with cinnamon/sugar)! Although, after I took the pictures, my daughter asked why I put pumpkins on an apple dessert. Hmmm, I guess they do look like pumpkins. But I used my mini apple cutter, I’m positive.

No Bake Apple Pie Cheesecakes

Ingredients (6-8 servings)
  • 1 Tbsp unsalted butter
  • 3/4 cup apples, peeled and diced
  • 1 tsp cinnamon
  • 1/2 tsp allspice
  • 1/4 tsp ground nutmeg
  • 1 pkg (8oz) cream cheese, softened
  • 1 can (14oz) sweetened condensed milk
  • 1 tsp lemon juice concentrate
  • 6 oz Cool Whip
  • 1/2 pkg refrigerated pie crust dough (unrolled)
  • 2 Tbsp butter
  • 2 Tbsp cinnamon/sugar mixture
  • 1/4 cup toffee bits (Heath)
Instructions
In a small non-stick skillet (I used an omelet pan), melt 1 Tbsp butter over medium heat. Add in apples, cinnamon, allspice and nutmeg. Stir over medium heat for about 3-4 minutes, until apples have softened slightly. Set aside to cool.
In mixer, beat cream cheese with condensed milk and lemon juice for 5 minutes. Add in cooled apple mixture. Fold in Cool Whip. Fill 6-8 dishes for individual servings. Sprinkle with toffee bits. Refrigerate 3 hours until ready to serve.
To garnish with pie crust, melt 2 Tbsp butter. Spread over unrolled pie crust and sprinkle with cinnamon sugar mixture. Use a small apple cookie cutter and place cut outs on a parchment paper lined baking sheet. Bake according to package (mine was 450 degrees for 8 minutes). Cool and garnish each dish. This will make lots of extra “apples” so feel free to put a bowl of little pie crust cookies on the table at dessert. My family enjoyed using these as spoons to scoop up the cheesecake!

I love how similar I recipes turned out:-) Cooked apples and cream cheese goodness…yes, please!!! Haha I have to agree with your girlie…kinda does look like a pumpkin. But since you said you used an apple, I believe you;-)

I fell in love first at No-Bake (it’s still 100 degrees here–ugh), and then I read Apple Pie and my heart skipped a beat or two… and then I heard Cheesecake and I’m now officially freaking out over this insanely delish cheesecake!! I’m loving Applelicious week :)

Aimee, cheesecake is one of my indulgent favorites. However, I NEVER have the patience to actually bake one myself. My mom’s makes a great chocolate chip cookie dough one, though. These are more up my alley. And you know I love apple!
