No Bake Cookies with Double Espresso

I love no-bake cookies. And these combine cookies with my other love…coffee! By adding in some espresso powder and using the new Jif Mocha Cappuccino Hazelnut Spread, these cookies are simply irresistible!
I prefer not to share these with my kids. I mean, with Halloween over, and the candy buckets still full, they definitely don’t need anything more to make them bounce off the walls.
No need to even dunk them in coffee. Or milk. These are super moist like a traditional no bake cookie!
In other news, I have finally turned my heat on. I play this little game with myself…it’s called, “let’s see how long I can go until the family cries about the cold mornings!” And there’s something you should all know. I’M ALWAYS COLD. So why I do I do this?
I really have no idea. No answer. Except to say, November is here, Christmas baking has begun, and I have already started to put out the winter decorations! oh, and the Christmas music is playing…..

No Bake Double Shot Cookies

Easy no-bake cookies with a delicious addition of espresso powder and Jif Mocha Cappuccino Hazelnut Spread!


  • 2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp espresso powder
  • 1/2 cup milk
  • 1/2 cup unsalted butter
  • pinch of kosher salt
  • 1/2 cup Jif Mocha Cappuccino Hazelnut Spread
  • 3 cup quick oats


  1. Over medium heat, cook sugar, cocoa, espresso powder, milk and butter. Bring to a boil and boil for one full minute. Remove from heat. Stir in salt, Jif spread and oats. Drop by teaspoon onto parchment paper and cool. Refrigerate. Eat. Repeat.

    They look great and was just on Shelly’s site – you two are twins today with your dark, oaty, no-bake cookies. I love how glossy and smooth and shiny yours stayed!

    Coffee no bakes? Oh, boy! I know what my last jar of that Mocha Jif is going for now:-) I do love how dark and chocolatey they are!!!

    Eeek! No-bake is my best friend sometimes when my oven is popular with cakes and dinner and the like. These cookies look awesome!

    I’ve never made a no-bake cookie before and I have no idea what I’m waiting for!! I love that you used espresso in this. Chocolate & espresso & hazelnut = my perfect cup of coffee..but better in a cookie form :)

    Bring on the holiday treats! 😉 I totally need to get some of that JIF. I keep staring at it every time I go to the store, but I know I’ll end up eating it all with a spoon. That’s totally acceptable, right? And I’m in love with the coffee no-bakes. YUM.

    Ha, I NEVER turn it on. I put gloves on and a jacket. Then I’m shivering and I turn it to, like 60. We pay so much in the summer I can’t bear to pay more in winter. I think these cookies would warm me up though, no bake or not! (They’d add to my layer of warming blubber… :) )

    Mocha hazelnut spread?! I wish they had that over here! I have to make my mine. And this takes ages. Anyway, love no-bake cookies but I haven’t made them in years. These look so easy! Love it.

      I got mine from King Arthur Flour, online. I’ve seen it at Sur la Table as well. I haven’t tried this, but I saw someone suggested you could substitute instant coffee granules?!

    I used light butter and 1% milk and I got 34 cookies – 72 calories each!:)

    This recipe is amazing! It’s so fast and easy! I can’t get the Jif spread on canada, so I just substituted it and 2 starbucks via coffees! They taste great and the oats add some yummy texture. I drizzled mine on top with some chocolate and they looked so gourmet! Thanks for the recipe!
