I forgot to mention in that title that I have a fun giveaway for you all today! Courtesy of Brookside Chocolate!

I was recently sent one of the most beautiful, thoughtful packages from Brookside Chocolate. They had reached out to me asking if I’d like to give their chocolates a try. Seriously. Who says no to chocolate?

What I didn’t expect is this lovely package that arrived at my door. Filled with items that I personally “liked” on pinterest! They went on pinterest to find products I love! How thoughtful, right??? (below is a picture of the gift I received…find out what yours will include….)

The bags of chocolate were delicious! Easy to eat on the go snacks, and my family is always on the go! My favorites were the Pomegranate, but I think it’s only because I can’t seem to take in enough pomegranates these days. And I didn’t have to take the seeds out of the fruit. Brookside took care of that for me, and then covered them in chocolate. Nice, right?

I think that sounds wonderful. If you haven’t already tried their chocolate, let me be the first to tell you how good they are. And these muffins have a sweet surprise in them. I used the Dark Chocolate Acai with Blueberry in addition to milk chocolate chips to sweeten them up. I also baked them up in my jumbo muffin pan, so they are just like those big bakery style muffins you find in the stores!

Bakery Style Double Chocolate Muffins

Yield: 10 jumbo muffins

Ingredients

  • 7 oz milk chocolate bars, chopped (use good quality)
  • 5 Tbsp unsalted butter
  • 3/4 cup sour cream
  • 2/3 cup light brown sugar
  • 1/4 cup light corn syrup
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cup all purpose flour
  • 1 tsp baking powder
  • 1 1/2 tsp baking soda
  • 2 Tbsp dark chocolate cocoa powder
  • 1/4 tsp kosher salt
  • 1 cup mini chocolate morsels, divided
  • 7 oz pkg Brookside Dark Chocolate Acai with Blueberry
  • 1 1/2 cup milk chocolate morsels

Instructions

  1. In a small saucepan, melt 7oz milk chocolate bars with butter, whisking until smooth.
  2. In a large mixing bowl, mix sour cream with brown sugar. Add melted chocolate and butter mixture, combining completely. Mix in corn syrup, egg and vanilla. Add flour, baking powder, baking soda, cocoa powder and salt. Combine until fully incorporated. Fold in 1/3 cup mini chocolate morsels and Brookside Chocolate.
  3. Preheat oven to 400 degrees F. Place liners in jumbo muffin cups. Fill 3/4 full. Bake for 25 minutes, remove, and immediately sprinkle remaining min chocolate morsels and milk chocolate morsels on top of muffin. Allow to cool in pan 10 minutes.
  4. **if making regular sized muffins, bake in a 375 degree oven for 15-18 minutes.

Everyone already knows that Dark Chocolate has great health benefits, but Brookside Chocolate takes first place in good taste! My New Year has seen some changes in diet, like eating more salad and smaller portions of food.

I’ve been working on making sure I start the day with a healthy breakfast and eat more fruits and veggies. I also now take a calcium and vitamin d supplement to keep my bones strong. Plus having a new puppy, I am doing A LOT more walking – 5 miles every day!

I also try to keep the mindset that age is just a number!

I only eat a little bit of what I bake and give the rest away. That way I am not tempted. I also skate three times a week. That is how I try to stay balanced.

With a sweet tooth like mine, it is definitely hard to find balance! As a college student, it can be hard to stay healthy. I joined a local gym (not the school’s) so that I can workout early in the morning before classes! I have been trying to eat lots more fresh vegetables and trying hard to cut back my caffeine intake!

To find balance, I do everything one step at a time. Finish what I started and move on to the next. I always, no matter what find at least 20 minutes to exercise everyday and for treats, no treat is off, just have what you like in moderation!

I try to use coconut oil and whole wheat flour when I can. I also use butter and not margarine anymore.

My hubby would love this chocolate. I have never heard of this brand.

To have balance in my life must include time for me to regroup at night. I make it a point to shut off all electronics, relax and read in bed. I do this 1/2 hour before I got to bed and it gives me time to debrief and get it together. Shutting off my electronics was difficult for me at first, but it really works and relaxes me.

I am working on balancing my life by getting up a little earlier in the morning. Sometimes I exercise, sometimes I just have quiet time for me before my son wakes up. It helps me focus before the rest of the day goes by in a blur!! :)

I stay balanced with a great workout routine throughout the week and not stressing out over eating the foods that I love. If I want something, I’ll have it! Just might mean I have to put in a little extra time at the gym :)

What a wonderful giveaway–I want to try that chocolate! Looks delicious. I am trying to have balance in my life by setting aside at least one night a week for “me” time. So that can be reading, yoga, cooking, watching a movie, ect. Life gets crazy and I must admit there really isn’t a lot of time for me to focus on bettering myself or just giving myself to enjoy the small things and not worry about the daily grind!

My Grandma had a heart attack the day after Christmas & thankfully she is okay, but she has been healthy her entire 83 years. As I am her next of kin, I’ve had to take care of alot of health & financial business for her. One of her requirements was to start walking to help her heart. I too have done the same. Along with her & my oldest daughter running her first TinkerBell Half Marathon, I’ve been inspired by both! This is a whole new year, a better year than last & I want to start it off right. I’ve completed my first 5K & continue to train so I too may complete my first Half!

Balancing things in my life such as eating healthy, exercising, keeping my mind sharp and myself stress free as much as possible is something I work at everyday and find that focusing is an important aspect in achieving that balance.

Balance?! With all the running around I do with 3 kids all in activities I am lucky if I remember to eat :) I guess mostly we have good food with “treats” in moderation…I could really use to exercise more.

Like most, I struggle with balance on a daily basis. I think throughout the week I do a decent job, but only because I make the time on the weekends to shop & line up healthy meals for the week. Sometimes everything goes out the window & it’s soup/sandwich for dinner. But at east it’s better than the fast food it would have been before….
