Vanilla Cupcakes with Strawberry Filling and Strawberry Buttercream

This is a gorgeous Vanilla Bean Cupcake, using my favorite, from scratch, white cake recipe. It’s filled with strawberry preserves and topped with a creamy Strawberry Buttercream Frosting! Perfect for Valentine’s Day!

So Valentine’s Day is tomorrow.

I remember many many years ago actually going out to dinner for Valentine’s Day. And drinking wine. And having a rich chocolate dessert. And being given roses.

These days when I think of Valentine’s day my mind immediately goes to pink treats with sprinkles…or kids school parties. And tissue boxes. Oh those darn tissue boxes that hold all the cards from your classmates. I have three daughters (and one son). My daughters LOVE collecting things, and it’s this time of year when the collections start to pile up. And by pile up, I mean take over their rooms. From cute heart shaped eraser tops to tissue boxes with Valentine’s cards…it just gets crazy. And of course, you can’t throw it away. It’s “special.”

So, I will let them have their collections of stickers and ring pop wrappers and constructions paper hearts as long as they don’t complain about all the pink treats I make!

And rest assured, there were NO complaints about these delicious cupcakes! I used my favorite Vanilla cake recipe (from scratch) and then filled them with a little dollop of strawberry preserves. I also used the strawberry preserves in the frosting. These would be a beautiful treat for your family on Valentine’s Day. Or the perfect cupcake for a class party!

Vanilla Cupcakes with Strawberry Filling and Strawberry Buttercream

Yield: 24-30 cupcakes


    For the Cupcakes:
  • 5 egg whites, room temperature
  • 3/4 cup whole milk
  • 2 Tbsp vanilla bean paste
  • 3/4 cup unsalted butter, softened
  • 1 3/4 cup granulated sugar
  • 2 1/2 cup cake flour
  • 1 Tbsp baking powder
  • 1/2 tsp kosher salt
  • For the Filling:
  • 1 cup strawberry preserves (I used store bought)
  • For the Frosting:
  • 1 cup unsalted butter, softened
  • 1/2 cup heavy cream
  • 6 cup powdered sugar
  • 1/2 cup strawberry preserves


  1. For the cake, whisk together the egg whites, vanilla paste and 1/4 cup of the milk in small bowl until slightly combined. Set aside.
  2. In mixing bowl, beat butter and sugar for 2 minutes on medium. Add in dry ingredients and mix until combined. Slowly in a steady stream add in the egg white mixture. Beat in remaining milk.
  3. Fill cupcake liners half full with batter and bake in a 350 degree oven for about 15 minutes. Remove and cool in pan 5 minutes then transfer to a wire rack. Cool completely before frosting.
  4. Using a piping bag with a small star tip, filled with the 1 cup of preserves, squeeze into tops of cupcakes. I pressed the tip into the center of each cupcakes then gave enough pressure until I saw the cupcake bubble a little bit. You can also use a cupcake plunger if you choose.
  5. For the frosting, beat butter for 3 minutes, until pale in color. Add cream, powdered sugar and preserves, beat an additional 3-5 minutes until fluffy. I used Tip 6S for my cupcakes. You can add sprinkles too, if desired. ENJOY.

    Nowadays I much rather have a pink treat than anything that takes up space and clutters place and mind 😉

  10. These look magnificent! I’ve done red, as in red velvet cream cheese brownies, so I think I’m ready for pink. Our Valentine’s Days sound similar! I have two boys, and they hoard all their paper valentines, trinkets, etc. They barely look at them, but they’re “special”, just like you said. I have to sneak them to the trash once they’ve forgotten about them. It’s all about the treats for me. Onto pink treats.

    I live in a small little town so I don’t know if I’d be able to find vanilla bean paste and I want to make these Sunday for my brother in law to try and see if they are what they want for his wedding in April. Can I just substitute vanilla extract?

    • Hi RaeAnna, I order it online from, it’s worth every penny 🙂 You can substitute vanilla extract and vanilla beans though.

        So I made this tonight as a trial run to see if my brother in law will like them.. they fell in the center really bad and I’m thinking that’s not normal? I did notice that there were small chunks of sugar and butter mixture that didn’t seem to smooth out in the mixture. Think that could be the issue?

    I just made these as a sample batch for my DD baptism. Sooo good. Light and fluffy and a bit if crumbly texture. Thinking I might also make a batch if the raspberry lemonade ones as well and have a bit of variety 🙂
