Cookies and Cream S’mores Bars

Happy Mother’s Day! Today I count my blessings for my four beautiful children! I am the luckiest mom in the world.

Summer is coming soon, we only have 3 weeks left of school. Summer brings BBQ’s, potlucks and camping. And you know what that means…S’MORES!

I’ve said it before on the blog, and I’ll say it again. Something about the ooey gooey messy S’more just doesn’t appeal to me. Add in the flaming fire ball on the end of a stick and you can say I get a bit neurotic.

These S’mores cookie bars though appeal to everyone! You still get the ooey gooey but in an easy to eat bar. Plus, no fire necessary!

The bottom is a layer of graham cracker crust. All cookie bars should have a crust. I made these after my love of the Toffee Chocolate chip Bars. The next layer is fudge. Soft creamy milk chocolate fudge. Top it with a chocolate chip cookie and we are almost there. Instead of traditional Hershey bars, I used Hershey Cookies and Cream Bars. It was a good call, trust me. You can go traditional though, if you prefer. I also added some mini marshmallows. Bake, cool and enjoy! {scroll down past the photos for the recipe}

Clearly I love layers. These Layered S’more Brownies also have a delicious graham crust topped with fudge, brownie and Peeps. You can substitute large marshmallows for the Peeps for year round enjoyment!

Cookies and Cream S’mores Bars

Prep Time: 2 hours, 30 minutes

Cook Time: 35 minutes

Yield: 32 bars

Thick cookie bars filled with graham crust, fudge and chocolate chip cookie. Topped with Hershey Cookies and Cream bars and marshmallow.

Ingredients

    For the Crust:
  • 2 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • For the Fudge layer:
  • 1 can (14oz) sweetened condensed milk
  • 12oz milk chocolate morsels
  • 1 Tbsp unsalted butter
  • For the Cookie Layer:
  • 3/4 cup unsalted butter
  • 2 Tbsp milk (I used skim)
  • 1 Tbsp vanilla extract
  • 1 1/4 cup brown sugar
  • 1 egg
  • 1 3/4 cup all purpose flour
  • 1 tsp kosher salt
  • 1 tsp baking soda
  • 1 1/2 cup milk chocolate morsels
  • 2 bars (4oz each) Hershey Cookies and Cream bars
  • 1 1/2 cup mini marshmallows, divided

Instructions

  1. For the crust, mix graham cracker crumbs with melted butter using a fork. Line a 13x9 baking pan with parchment paper. Press crust into bottom of pan. Take your time, there is plenty of crust. I floured my fingers so it wouldn't stick while I pressed the crust down.
  2. In a small saucepan, heat condensed milk until warm, over low heat. Add butter and milk chocolate morsels. Remove from heat and whisk until smooth. Pour over graham layer evenly.
  3. For the cookie layer, beat butter with milk, vanilla and brown sugar. Beat in egg. Add flour, salt and baking soda and beat until combined. Fold in chocolate morsels and 1 cup mini marshmallows. Drop by large scoops onto fudge layer and press with fingertips until covered.
  4. Bake in a 350 degree oven for 35 minutes. Remove from oven. Break cookie and cream bars into individual squares. Press them immediately into hot cookie bars, lightly. Sprinkle with remaining 1/2 cup mini marshmallows, pressing them in lightly too. All bars to cool completely. Once cooled, refrigerate for 1-2 hours before cutting.
  5. Store in airtight container for up to 7 days. ENJOY!

    I was just saying to my husband that we should have a picnic and grill in the park soon. I don’t think we’ve been out there since December. I might have to bring these bars for dessert. They look insane.

    That Fudge layer looks so good! I make actual fudge like that with sweet cond milk and choc chips – I need to work it into layered bars. Great job on these!

    Noooooooo! Haha I am not terribly excited about school being out, because that means my siblings and dad will be home all day every day watching bad TV and eating all my baking supplies, haha. However, I can get into celebrating summer with some of these gooey, awesome bars! Cookies + cream plus s’mores sounds magical!

    Happy Belated Mother’s Day, Aimee! Cookies n cream chocolate bars mixed with a fudge layer and marshmallows sounds so good right now. Call me boring, but graham cracker crusts are like my favorite thing. I love them and prefer them to any other type of crust! And I bet it makes these bars even better.

    I still can’t believe summer is happening already! It was 80 degrees last Friday and I was like WHAT IS HAPPENING – but then you reminded me of s’mores, and then I stared/drooled over these bars and decided summer coming quickly is a good thing. :)
