Chili Queso Dip That Everyone Agrees On!

With football season in full swing, your friends and family will LOVE a new twist on a classic Queso Dip! Thanks to creamy VELVEETA Cheese and zesty RO*TEL tomatoes

and green chilies, this dip is ready in 5 minutes!

Chili con Queso dip: three ingredients and delicious too!

In our house, girls out number the boys. The TV is always turned onto a lifestyle or food channel, the music is usually of the “teen bop” nature, and the food..well, the food is one thing we all agree upon. I’m sure you have all had Queso Dip. Right? It’s a classic. I know I’ve been eating this dip for centuries. Well, fine, not centuries, but you get the drift. Many many years.

 

One pound of VELVEETA cheese and one can of undrained RO*TEL tomatoes with green chilies combined and served with tortilla chips. I added a delicious twist by adding a can of chili to this dip. If you like beans, feel free to use whatever brand or type you enjoy. I used a good, meaty chili with no beans. Actually, it’s the perfect dip to serve at YOUR next tailgating party.

Do you tailgate? What team do you follow? My family is from Chicago, so of course we’re Packers fans. Bwahahaha, kidding. We are of COURSE Bears fans. Even my girls have Bears t-shirts and jerseys. Yep, another agreement in our home. Having friends over for football though can be a little tricky. We live in the heart of Bengals country (Cincinnati) and most of our friends are Bengals fans. Fortunately, when you have good food, people aren’t really watching the game, they are standing over the big bowl of queso dip! And I’m okay with that – I may even be able to change the channel when nobody is looking!

Another great reason to make this crowd pleasing dip? Well, it not only makes enough to serve a crowd, but it’s ready in 5 minutes. One bowl, in the microwave, no cleanup necessary. I usually pour the ingredients into the bowl, cover it with plastic wrap and refrigerate. When I’m ready to serve the dip, put the bowl (with the plastic wrap) right into the microwave. I even serve straight from this bowl. Seriously, how easy is that? Gives you more time to enjoy your guests when you aren’t slaving in the kitchen! Chili Queso Dip

Ingredients

  • 1 pound Velveeta cheese, cubed
  • 1 can (10oz) Ro*Tel Tomatoes and Green Chilies
  • 1 can (15oz) no bean chili

Instructions

  1. In a large (2qt) glass bowl (or other microwave safe bowl), combine all three ingredients. Cover with plastic wrap.
  2. Microwave on high for 3 minutes. Stir and microwave an additional two minutes. Stir until smooth! Serve with tortilla chips and enjoy!

I love this dip because all of the ingredients is something I have stocked in my pantry. So this is something I can rely on whenever I have guests. Sometimes I substitute fresh ground beef to the recipe instead of the chili. YUM!

That was an awesome game last night, wasn’t it. Even though I’m down in NC, I pull for the Bears also. Once a Bears fan, always a Bears fan. I’m actually kind of glad I didn’t have this dip with me while I was watching…I’d have finished off the whole thing by myself. It looks SO good.

This dip is simply the best!! My husband loves cheese. We love Mexican food. It is very special to look forward to having this sometimes and for football watching at home on a weekend. A traditional queso dip people just love!

I really like tailgating food … but I prefer it in a heated house vs. the cold outdoors:) I love the idea of adding chili to queso, though I think I’d leave the beans in … what a great addition! Sure to be a hit!

My grandmother used to make a similar dip, which she served with Fritos. I loved it, but have never found her recipe. I’ll have to give your version a try — it looks fantastic!

I love this dip because of nostalgia! Years ago, my college roommate’s mom made it for a Thanksgiving gathering, but she added so much hot pepper that no one wanted to eat it! So she made us take it home with us… it was SO HOT! But still good ;)

we make ours with 1 lb velveeta, 1 lb sausage and a small jar of salsa! Its amazing!
