I love all the textures and flavors happening in these peppermint cream bites. The crunchy cookie layer, the smooth and creamy mint center and, of course, the sweet chocolate on top.

Wondering what they taste like? Imagine a peppermint patty (or even one of our cream cheese mints), combined with crunchy oreos!

Ingredient Notes

  • Chocolate sandwich cookies – I usually opt for Oreos, but you can use any cream-filled chocolate wafer cookie.
  • Peppermint Extract – Make sure to use the extract that’s labeled “peppermint” not just “mint.” The mint ones will make your cream bites taste like toothpaste. Definitely not what you want in your dessert!
  • Bittersweet chocolate – You can use a bar of dark chocolate, cut into small pieces or chocolate chips. It gets melted in the microwave then poured over the peppermint cream.
  • Shortening is combined with butter and powdered sugar to make the peppermint cream fluffy and smooth. I use regular vegetable shortening (like Crisco).

Easy Instructions

First, assemble and bake the chocolate cookie crust. While it’s baking, mix together the peppermint cream ingredients.

Spread the peppermint mixture over the baked crust. Then freeze the whole thing for 45 minutes.

Pour melted chocolate over the chilled peppermint layer. Immediately sprinkle crushed candy canes on top. Cut the bars into your desired shape and size right away.

How long can they stay out at room temperature?

Peppermint Cream Bites can be left at room temperature for about 30 minutes before they will start to soften. If they begin to seem soft or gooey, stick them back in the freezer for a few minutes to firm them up again.

I don’t like bittersweet chocolate. Can I use milk chocolate instead?

You sure can! Bittersweet (or dark) chocolate makes these taste more like classic peppermint patties. But if you’re a milk chocolate fan, I’m sure you’ll love the way it tastes in this recipe!

How do you crush the cookies?

The easiest way to crush them is in the food processor. Add whole cookies to the bowl of the food processor and pulse until coarse crumbs form.
If you don’t have a food processor, put the cookies in a large zipped plastic bag and crush them with a mallet.

Peppermint Cream Bites

Ingredients 

  • 1 Β½ cups crushed chocolate sandwich cookies with white filling 15 cookies
  • 3 Tablespoons butter melted
  • 2 cups powdered sugar
  • 2 Tablespoons butter softened
  • 2 Tablespoons milk
  • 1 teaspoon peppermint extract
  • 6 ounces bittersweet chocolate chopped
  • 2 teaspoons shortening
  • 2 peppermint candy canes crushed, for garnish

Instructions 

  • Preheat oven to 350 degrees F. Line an 8x8x2-inch baking pan with foil, extending foil over edges of pan; set aside.
  • In a medium bowl combine crushed cookies and melted butter. Press mixture into the bottom of prepared pan. Bake for 8 minutes. Cool slightly in pan on a wire rack.
  • Meanwhile, in a food processor combine powdered sugar and softened butter. Cover and process until butter is evenly distributed. With processor running, add milk and peppermint extract through feed tube until a paste forms. Spread peppermint mixture evenly over prepared crust. Freeze for 45 minutes.
  • In a medium microwave-safe bowl combine chopped chocolate and shortening. Microwave on 100 percent power (high) about 1 minute or until chocolate is melted, stirring once. Let chocolate cool for 15 minutes. Pour chocolate over peppermint layer, spreading evenly. Sprinkle immediately with crushed candy canes.
  • Using the edges of the foil, lift uncut bars out of pan. Use a 1-1/2-inch round cookie cutter to cut into rounds* or use a sharp knife to cut into squares. Store in the freezer until serving time.

Notes

  • How to cut: Use a sharp knife to slice these into bite sized squares OR cut the bars into holiday shapes with a cookie cutter!
  • Keep frozen: Store peppermint cream bites in the freezer until ready to serve. They stay good for up to several weeks, so feel free to make a couple of batches at once so you can enjoy them all season long.
