Why this Recipe Works

I’ve heard too many home bakers say they “can’t make fudge.” Why? Because the term “homemade fudge” conjures images of a fussy recipe with candy thermometers and complicated steps.

This recipe eliminates the need for a candy thermometer!

The hardest part about this recipe is waiting for the fudge to be ready to cut (about 4 hours at room temperature or in the refrigerator). When it’s ready, you have perfect smooth creamy fudge.

This Macadamia Nut Fudge is even better than candy shop fudge. Especially because you’ll know you made it by yourself!

With my method, learning how to make chocolate fudge is as easy as can be. The crunchy macadamia nuts just make it more delicious!

Ingredient Notes

Ingredients needed to make macadamia nut fudge.

Chocolate chips. I use milk chocolate for ultimate sweetness.

Butter. We use unsalted butter in most of recipes. This allows us to control the amount of kosher salt, if needed.

Marshmallow cream. Also called “fluff”, this ingredient is the key to soft velvety fudge without needing a candy thermometer.

PRO TIP- We love making our own homemade vanilla extract, but if using store bought, be sure it’s pure extract, not imitation (for best flavor).

You won’t believe how easy it is to make Macadamia Nut Fudge.

Combine. Mix milk, sugar, butter and vanilla together in a sauce pan.

Boil. Bring the mixture to a boil and stir constantly for 4 minutes.

Pour and beat. Pour the boiled mixture over a bowl filled with marshmallow fluff and chocolate chips. Use an electric mixer to beat until the chocolate is melted and combined. Fold in half a cup of macadamia nut pieces.

Chill. Pour fudge mixture into a parchment lined dish. Press the rest of the macadamia nuts into the fudge. Cover and place in the refrigerator for at least 3 hours.

Cut. Slice the set fudge into squares and enjoy!

Tips and Tricks

  • Storing fudge. Transfer set fudge to an airtight container. It keeps well for about a week. Can be kept at room temperature OR refrigerator.
  • Freshest tasting fudge. To keep fudge fresh, store it BEFORE slicing. Then, slice off pieces as you eat them.
  • Use electric beaters. While you CAN make this fudge by hand mixing, it comes together easiest when you use a stand mixer or electric beaters.
  • Nuts. Toasting the nuts can bring out a delicious nutty flavor and result in great texture too.

Recipe FAQs

What can I use instead of marshmallow cream?

If you can’t find marshmallow cream, you can make this fudge with whole marshmallows. Use about 25. You’ll need to beat the fudge mixture longer to fully melt and incorporate the marshmallows.

Can I make this with other kinds of nuts?

What size pan do I need to make fudge?

I use an 8 x 8 square baking dish for all my homemade fudge recipes.

Can I freeze this fudge?

Yes, macadamia nut fudge can be frozen before cutting. Wrap the whole block in plastic wrap or foil, then place it in a gallon sized freezer bag. Let thaw on the counter, then cut into squares and enjoy!

Ingredients 

  • 2 cups Granulated Sugar
  • ½ cup Milk
  • ½ teaspoon Pure Vanilla Extract
  • ½ cup Unsalted Butter
  • ¾ cup Marshmallow Cream Fluff
  • 1 package Milk Chocolate Chips 12 ounce
  • 1 ¾ cups Macadamia Nuts Divided

Instructions 

  • In a large saucepan, combine sugar, milk, vanilla, and butter.
  • Bring to a boil over medium high heat, stirring constantly. Once boiling, keep at a rolling boil for a full four minutes (still stirring).
  • For this next step, I use a stand mixer with whisk attachment (a hand mixer would work too). Add the marshmallow cream and milk chocolate chips in mixing bowl. Pour hot mixture over these ingredients and blend until smooth. I turn my mixer on medium speed and blend for about one minute, scraping down sides of bowl as needed.
  • While this is mixing, line an 8-inch square baking dish with parchment paper.
  • Once mixture is smooth, fold in 1 1/4 cup of the macadamia nuts. Pour into prepared dish and press remaining 1/2 cup nuts on top of fudge, pressing lightly. Allow to set for 3 hours, or overnight. Cut and enjoy.
  • Store fudge in airtight container for up to 1 week.

I just got back from Maui last month and I want to go back as soon as possible!  Hawaii is the one vacation you never want to leave from, and you’re so lucky you got to go for 2 weeks.   I wish they sold those Hershey’s kisses here, but hey — we don’t need them when we have this fudge!  Plus this fudge has way more macadamia pleasure….love this!

  7. I haven’t been to Hawaii in years but I love it and would love to go back. And this fudge looks amazing. However, I would need to replace the nuts. 
    My grandmother went to a convention in Hawaii when I was a child and she brought back cases of macadamia nuts.  That was the go-to snack in our house for months and months and months. Now, 30 years later, I can’t even look at a macadamia nut…

  13. I’m such a frugal girl when it comes to cooking/baking but I will say my one splurge is macadamia nuts! You can’t beat the flavor or texture. Can’t wait to try =) Anyhow, did you know the local grocery store worker just told me that people cheap all the time buying these nuts, they print off that they are hazenuts ($3.99) a pound instead of macadamia nuts ($16.99) a pound. That is so wrong!
