February. I feel like this is the home stretch of winter. It’s been a snowy year, with quite a few days of no school. Which equates to MORE homework for the kids.

More homework means crazy evening schedules. I don’t know about you, but sometimes we need to give ourselves a break in the kitchen. 

We prefer to not eat out during the week, but I’m ALL FOR a little help IN the kitchen. And by help, I mean shortcuts.

You may remember a few months ago when I used the On-Cor Chicken Parmesan Patties to create a semi-homemade cheese garlic bread! We’ve had that dinner several times since then, it’s becoming a favorite in our regular rotation!

Today, we went simple. Classic comfort food. On-Cor Lasagna. Freshly made pasta layered with real mozzarella cheese and a meaty tomato sauce.

While our lasagna with meat sauce was cooking, I whipped up a fresh Italian Salad with homemade Italian Dressing. It was the perfect pairing that rounded out our dinner!

How to make a BIG Italian Salad

While your lasagna is in the oven (it takes about 45-50 minutes), whip up your salad.

For today’s classic Italian salad recipe I used one bag of salad mix. Mine included iceburg lettuce, purple cabbage, and shredded carrots. You’ll need about 6 cups total, so if you prefer to chop your own, feel free to do so!

I also sliced some red onion (about 1/4 of a medium onion) and two Roma tomatoes, sliced.

Add in some mild pepperoncini and black olives. Refrigerate until ready to serve.

When ready to serve, top with croutons and a sprinkle of grated parmesan cheese. Add homemade Italian dressing (recipe below)!

How to make Homemade Italian Dressing

In a large mason jar, add olive oil, white vinegar, mayonnaise, grated parmesan cheese, lemon juice, sugar, garlic powder, garlic salt, kosher salt, black pepper, and Italian seasoning.

Shake until well blended. Refrigerate until ready to use. Serve over salad and enjoy!

Ingredients

For the salad

  • 6 cups salad mix (including iceburg lettuce, purple cabbage, and shredded carrots)
  • 1/4 red onion, sliced
  • 8 mild pepperoncinis
  • 2 Roma tomatoes, sliced
  • 1 cup black olives
  • 1 cup croutons
  • 1/4 cup grated parmesan cheese

For the dressing

  • 1/2 cup olive oil
  • 1/4 cup white vinegar
  • 2 Tbsp mayonnaise
  • 2 Tbsp grated parmesan cheese
  • 1 tsp lemon juice
  • 1 tsp granulated sugar
  • 1 tsp garlic powder
  • 1 tsp garlic salt
  • 1 tsp kosher salt
  • 1 tsp Italian Seasoning
  • 1/2 tsp black pepper

Instructions

  1. In a large bowl, combine salad mix, red onion, pepperoncinis, tomatoes, and black olives. Refrigerate until ready to serve.
  2. In a large mason jar, add dressing ingredients. Shake until blended.
  3. To serve, top salad with croutons, parmesan cheese, and Italian dressing. ENJOY.
