If you recall, yesterday I took out many sticks of butter. I had intended on baking something entirely different (but still seriously delicious). But first, I had to make a quick run to Kroger. I was completely out of vanilla. It happens often around here. I buy flour at Costco in the 25lb bag, Sugar in 10lbs, and the bulk powdered sugar and brown sugar as well. I don’t like to run out. But, I digress.
So, I stopped in to Kroger to pick up butter. Then I remembered I needed bananas. Oh wait, I think I am out of Diet Coke, I better get some of that too. While in the pop aisle, I noticed Orange Crush. Oh yum. That’s when it hit me. My cousin Emily had made lemon cupcakes just the day before, what about orange? Orange Crush brings me back to summer days, splashing in the sprinkler, riding my bike barefoot, playing tag…
So, as I set out through Kroger to make sure I had all the necessary ingredients, I spotted these cute little peeps. Oh my, how I love peeps. No, scratch that. How I love STALE peeps! I proceeded to buy ten boxes. Michael always says to me, just because they are 10 for $10, doesn’t mean you HAVE to buy ten boxes.
But, yes, I did. Because I have a plan for those peeps…next week. Needless to say, I forgot to buy my Diet Coke and I spent $106 on what was supposed to be vanilla. Oops.
Enjoy the cupcakes. They really have a great texture, almost more like a muffin. Feel free to skip the frosting (although I would never do that), and eat these for breakfast (I would eat it for breakfast with the frosting). Yum.
for the cupcake:
- 1 cup butter, softened
- 1¼ cup sugar
- 5 eggs
- 2 tsp vanilla extract
- 2 oranges, zested
- 3 cup flour
- 1 Tbsp baking powder
- ½ tsp salt
- ½ cup milk
for the frosting:
- 1 cup butter, softened
- 5 cup powdered sugar
- ½ cup Orange Crush soda
- ½ tsp Orange flavored extract
- To make cupcakes, preheat oven to 350 degrees. Beat butter and sugar until fluffy. Add eggs, vanilla and zest of 2 oranges. Add flour, baking powder and salt. Add in milk.
- Fill muffin cups ⅔ full (I use paper cup liners). Bake for about 20 minutes.
- Meanwhile to make frosting, beat butter until fluffy. Add in powdered sugar, orange Crush and orange extract. Beat for about 4-5 minutes. Frost cupcakes when cooled. Enjoy!
