I pretty much love Cookie Pizza’s. Today’s peppermint version is one of my favorite’s, too!
My son celebrated his 18th birthday last month (I know, it doesn’t seem possible that I am a parent to an 18yr old…you’re all shocked right?).
Anyways, for his “cake” he requested cookie cake (or cookie pizza, whatever you call it). I have made these many times in the past. You may remember this Thanksgiving Cookie Cake or my Christmas Cookie Cake from a couple years ago?
Well, I’m back today with a no-fuss cake today. No fuss as in, “you don’t have to make a tree or turkey to get this cake cute.” I added some of my favorite Andes Peppermint Crunch
baking chips. I topped the cake with a sweet peppermint buttercream frosting and sprinkled it with crushed candy canes and mini chocolate chips. Easy Peasy.
If you can’t find the Andes Peppermint Crunch (and I know I’ve heard it’s not everywhere) you make a Chocolate Mint Cookie Pizza instead (see the photo below for the “green version”). I used Andes Mint Baking chips and topped it with a mint frosting, green sprinkles, and Andes Mint Candy. YUM!!
Or…if you can’t decide. Make them both! I use this Baking Stone to bake my cookies on. Just be sure to keep the cookie dough at least 1.5-2 inches in from the sides. I also chill my dough, which helps too! ENJOY!
