Stuffed Potatoes For Dinner

Don’t you dare try to tell me baked potatoes are “just a side dish”! In my house, we love baked potatoes as a main course, stuffed with all kinds of meats, cheeses and fresh vegetables.

This turkey twist on a classic stuffed baked potato is inspired by our favorite tacos!

With seasoned ground turkey, lots of Mexican cheese, crisp red onion, lettuce and tomato, these Turkey Taco Boats are filling without weighing you down.

Plus, there are so many ways to customize your stuffed baked potato to suit your taste. Such a fun (and good-for-you) easy dinner idea!

Ingredient Notes

  • Ground Turkey – Feel free to substitute beef taco meat if you prefer.
  • Taco Seasoning – Use my Homemade Taco Seasoning to control the salt and level of spiciness!
  • Avocado – Substitute your favorite Guacamole for a more intense flavor.
  • Shredded Cheese – Colby Jack cheese is my preference. You can substitute any favorite Mexican cheese blend you like on your tacos.

Easy Instructions

The most time intensive part of making baked potatoes is waiting for them to bake in the oven! I figured out a way around this: bake up the spuds in the Instant Pot!

Instant Pot Potatoes– use your pressure cooker to have potatoes in 30 minutes!

Oven Baked Potatoes- Of course, if you have the time to spare, go ahead and bake your potatoes in the oven the old fashioned way. Pierce each one with a fork and bake for about an hour until soft and cooked through.

Make the Taco Meat- While the potatoes are cooking, you can prep the taco meat by browning it in a skillet, then drain it and add it back to the pan with the taco seasoning and a little water. Simmer until the water evaporates.

Assemble the Turkey Taco Boats by cutting each baked potato in half lengthwise. Add taco meat and cheese, then top with lettuce, chopped tomato, chopped onion and avocado.

Dollop on some sour cream and serve!

Love a little more spice? A few shakes of hot sauce or a little salsa on top of these potatoes gives them a perfect extra kick.

How many servings does this recipe make?

The recipe makes enough meat to fill about 4 large potatoes or 6 medium sized potatoes, depending on how much you put into each one.

Can this recipe be doubled?

Of course! Doubling all the amounts and leaving extra cooking time can instantly turn this into an easy meal to feed a crowd!

How do you store these?

Assemble only the amount of stuffed baked potatoes you will be eating right away. If you have leftovers, store all the individual components in separate containers (e.g. ground beef in one container, toppings in another, potatoes wrapped up on their one). When ready to eat, reheat the potatoes and beef in the microwave then add desired toppings.

Can I substitute another kind of cheese?

Be my guest. Monterrey cheese and cheddar cheese would be great choices here too.

Ingredients 

  • 6 russet potatoes
  • 1 pound ground turkey
  • 1 packet taco seasoning
  • ¼ cup water
  • 1 avocado
  • ½ head lettuce washed and chopped
  • 3 large roma tomatoes diced
  • ¼ cup red onion sliced
  • 1 cup colby-jack cheese shredded
  • sour cream

Instructions 

  • Bake potatoes in oven. I like to bake mine directly on the oven rack in a 375 degree F oven for about one hour (pierce potatoes with a fork first). Potatoes will vary in cook times depending on size.
  • Meanwhile, cook ground turkey in a large skillet until browned. Drain. Add taco seasoning and water and simmer for about 10 minutes.
  • To assemble, slice potatoes. Add ground turkey and cheese. Top with desired topping. ENJOY.
