  • 1 cup sour cream
  • 4 ounce cream cheese, softened
  • ¾ cup salsa (any variety)
  • ½ teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 can (15.25 ounce) Fiesta style corn (with red/green peppers)
  • 2 jalapenos, seeded and diced
  • 2 cups shredded cheddar cheese, divided

    1. In a large bowl, combine all but ½ cup of cheese. Mix and pour into a 1qt baking dish. Top with remaining ½ cup cheese.
    2. Bake in a 350 degree oven for 30-35 minutes. Serve with tortilla chips and enjoy!
    3. You can microwave this dip too, heat until warm and cheese is melted, time varies by microwave.

  • Can use regular sweet corn (in a can or frozen) instead of the Fiesta style.
  • Make ahead of time and refrigerate up to 24 hours. Heat and serve.
