Garlic Herb Roasted Chicken

Garlic Herb Roasted Chicken is a juicy, moist, flavorful main dish that the whole family will love! Skip the grocery store rotisserie chicken and make something homemade that tastes even better.

Ingredients

  • 4-5 pound whole roasting chicken
  • ¼ cup softened butter
  • 1 Tablespoon chopped fresh rosemary
  • 1 Tablespoon chopped fresh thyme
  • 1 Tablespoon chopped fresh parsley
  • 1 garlic clove minced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 lemon, halved

Instructions

    1. In a small bowl combine butter, rosemary, thyme, parsley, garlic, salt pepper, and the juice from half of a lemon. 
    2. Pat chicken dry with a paper towel. Rub butter mixture all over chicken to coat. Place lemon half and any remaining fresh herbs in the cavity of the chicken. 
    3. In a 375 degree oven, cook the chicken for 20-25 minutes per pound or until an instant read thermometer registers 165 degrees.  Let rest for 15 minutes before carving. 

Notes

I tied the chicken legs with cooking twine. This is completely optional.
