Strawberry Streusel Bars

Homemade pastry made easy! Juicy strawberry preserves and marmalade layered into a shortbread crust make these Strawberry Streusel Bars one of the tastiest treats to come out of my kitchen.

Ingredients

For the crust

  • ¾ cup unsalted butter, melted
  • 1 cup powdered sugar
  • 2 ½ cups all-purpose flour

For the filling

  • 1 can (8 ounce) almond paste
  • ½ cup orange marmalade
  • ½ cup strawberry preserves

For the topping

  • 1 package (8 ounce) cream cheese, softened
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, combine melted butter with powdered sugar and flour. Mix until crumbly. Remove ⅓ of the mixture for later.
  2. With the remaining crust, press into the bottom of 13x9 baking dish.
  3. Carefully spread almond paste onto the dough using a butter knife or back or a spoon. Spread strawberry preserves on half of the crust, and orange marmalade over the over half.
  4. In a mixer, beat cream cheese with powdered sugar, and vanilla extract. Once smooth, spoon into a pastry bag (I used tip 48, but any tip will work). Pipe diagonal lines onto the top of the filling. Sprinkle with reserved crust mixture.
  5. Bake in a 350 degree F oven for 30 minutes. Remove and cool completely.
  6. Cut into small squares and enjoy.

Notes

  • Place on a cookie sheet and in the freezer. After 30 minutes remove and slide cookie bars into ziploc bags.
  • Allow to thaw in refrigerator before enjoying.
