Watermelon Salad

The best summer side dish is here! Watermelon Salad with feta cheese and cucumbers gets a boost of flavor from fresh herbs and lime. Cool and refreshing on a hot day!

Ingredients

  • 4 cups watermelon, cut into cubes
  • 1 cup cucumber, diced
  • 1 Tablespoon fresh basil, chopped
  • 1 Tablespoon fresh mint, chopped
  • 3 ounce feta cheese, diced
  • 2 Tablespoons olive oil
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Slice the watermelon and cut into 1 inch cubes.  Add to a bowl.
  2. Add cucumbers, basil, mint, and feta cheese.
  3. Drizzle with olive oil, juice of 1 lime, and stir gently until combined.
  4. Season with salt and pepper, if desired.
  5. Refrigerate until ready to serve

Notes

    • Store leftovers in airtight container for 3-4 days.
    • Using English cucumbers is best, as they don't have the wax coating that regular cucumbers have. If using regular, remove skin and seeds.
    • 1 oz of feta cheese is about the same as a pair of dice. You can use the feta cubed, or crumbled on the salad.
    • Add 1-2 Tbsp of honey to the olive oil and lime juice for a sweetened dressing.
