How to Make Chocolate Ganache

Chocolate Ganache is a rich fudgy topping made with equal parts chocolate and cream. Add the perfect decadent finish to your favorite homemade desserts with this easy chocolate ganache recipe!

Ingredients

  • 1 bag (12 ounce) milk chocolate morsels
  • 1 ½ cups heavy whipping cream

Instructions

For the Microwave:

  1. Add chocolate chips and heavy cream to a clean, dry, microwave-safe glass bowl. Heat on high for 1 minute.  Stir.
  2. Continue heating in 15 second increments until all the chocolate chips have melted and ganache is smooth and creamy.
  3. For use right away, you may need to let it cool to room temp.

In a Double Boiler:

  1. Heat a double boiler with about an inch or two of water, over medium high heat.
  2. Add the chocolate chips and heavy cream. Stir continuously and continue heating until the chocolate has melted and is smooth and creamy.

Notes

  • No double boiler? You can use a large glass bowl placed on top of a medium saucepan with an inch or two of water in the bottom of the pan. 
  • DO NOT remove the double boiler from pot until the ganache is smooth and creamy (you don’t want to get any moisture in with your chocolate or it may seize).
  • Ganache to thin? Add more chocolate.
  • Ganache to thick? Add a little more cream.
  • Ganache will keep in the refrigerator in an airtight container for a couple of weeks.
  • Ganache can be frozen up to 3 months. Thaw in the refrigerator. Then let it sit out at room temp until ready to use.
  • Substitutions: Swap out milk chocolate for semi-sweet chocolate.
  • Chocolate. Good quality chocolate is best, whether it's bars or chips. If using bars, be sure to chop before melting. Dark chocolate will work, but doesn't have a great flavor when used as ganache, since there is no sweetness.
  • Try to keep a ratio of 1 part chocolate to 1 part cream. DO not make substititions for the heavy whipping cream, or your ganache will not set properly.
