Lemon JELLO Salad deserves a spot on all your summer menus! Zesty lemon, juicy pineapple and coconut come together in an easy recipe that's perfect as a sweet side dish or chilled dessert.

Ingredients

  • 1 container (8 Ounces) Cool Whip
  • 1 box (3 ounce) Lemon JELLO gelatin mix
  • 1 Can (20 ounce) Crushed Pineapple, drained
  • 2 Cups Fruity Mini Marshmallows
  • 1 Cup Sweetened Shredded Coconut
  • ½ Cup Cottage Cheese
  • 1 Tablespoon Lemon Juice

Instructions

  1. In a large mixing bowl, combine the Cool Whip with gelatin powder. Mix until combined.
  2. Add the remaining ingredients and fold everything gently together.
  3. Cover and refrigerate for at least one hour. Serve and enjoy.

Notes

  • Use our stablized whipped cream recipe in place of cool whip if preferred.
  • If you prefer a brighter yellow color, add a couple drops of yellow food dye to step 1.
  • Can be made in advance.
  • Store in airtight container in refrigerator for up to 3 days.
