Slow Cooker Chicken Fajitas

Easy Crockpot Chicken Fajitas recipe will be your dinner favorite. No marinade, no sauteed vegetables, the slow cooker seasons and tenders the chicken and peppers perfectly!

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 green pepper, seeded and sliced
  • 1 red pepper, seeded and sliced
  • 1 yellow pepper, seeded and sliced
  • 1 yellow onion, sliced
  • 2 Tablespoons chili powder
  • 3 Tablespoons cumin
  • ½ teaspoon kosher salt
  • ½ cup chicken broth
  • 1 lime, juiced
  • toppings: tortillas, shredded cheese, tomato, lettuce, avocado, etc

Instructions

  1. In a large crockpot, add chicken. Top with peppers and onion. Add seasonings and pour chicken broth over the top. Add lime juice.
  2. Cover and cook on low for 6-8 hours.
  3. When ready to serve, shred chicken into large chunks with a fork. Serve on a tortilla with your favorite toppings. ENJOY.

Notes

  • If you would rather have sliced chicken instead of shredded, remove from crockpot and slice on a diagonal. You may want to decrease your cooking time to 5 hours.
  • Want your peppers with a slight crisp? Add them in the last 30 minutes so they are colorful and crunchy.
  • Serve your chicken fajitas buffet style for a party with all your favorite toppings in bowls for guests to choose from.
