Peanut Butter and Jelly Sandwich Cookies

These gorgeous Peanut Butter and Jelly Sandwich Cookies are made with 4 simple ingredients. Sweet strawberry preserves are layered between chewy peanut butter cookies for a treat grown ups love as much as kids!

Ingredients

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • ⅓ cup strawberry preserves

Instructions

  1. Preheat oven to 350 degree F. Line a cookie sheet with parchment paper.
  2. In a mixing bowl, combine peanut butter, sugar and egg. Mix until well combined. Scoop into 1 Tbsp balls and drop onto cookie sheet.
  3. Using the tines of a fork, flatten cookie dough with criss-cross of fork tines.
  4. Bake for 10-12 minutes, until lightly browned. Allow to cool completely. Pair the cookies in similar size/shape. Spoon a small dollop of strawberry fruit spread between cookies. Press together lightly and enjoy!

Notes

  • Pair cookies of similar size for best looking sandwiches.
  • Use a 1 tablespoon measuring spoon or scoop to make the cookies as evenly sized as possible.
  • If your peanut butter is refrigerated, let it come to room temperature before adding to the recipe. This makes it easier to mix the dough and incorporate the ingredients.
  • Store in the refrigerator for up to 3 days.
