Watermelon Salad
with feta cheese and cucumbers gets a boost of flavor from fresh herbs and lime. Cool and refreshing on a hot day!

Ingredients

cups
watermelon
cut into cubes

cup
cucumber
diced

Tablespoon
fresh basil
chopped

Tablespoon
fresh mint
chopped

ounce
feta cheese
diced

Tablespoons
olive oil
Juice of 1 lime
Salt and pepper to taste
Instructions
Slice the watermelon and cut into 1 inch cubes. Add to a bowl.
Add cucumbers, basil, mint, and feta cheese.
Drizzle with olive oil, juice of 1 lime, and stir gently until combined.
Season with salt and pepper, if desired.
Refrigerate until ready to serve

Notes
Store leftovers in airtight container for 3-4 days.
Using English cucumbers is best, as they don't have the wax coating that regular cucumbers have. If using regular, remove skin and seeds.
1 oz of feta cheese is about the same as a pair of dice. You can use the feta cubed, or crumbled on the salad.
Add 1-2 Tbsp of honey to the olive oil and lime juice for a sweetened dressing.
