Strawberry Mints

Strawberry Mints are adorably pink candies you can make at home. These easy mints make a perfect gift or addition to any dessert table.

Ingredients

  • ½ cup unsalted butter, softened
  • ½ teaspoon mint extract
  • ⅓ cup light corn syrup
  • 3 ¾ cups powdered sugar
  • 3 Tablespoons strawberry gelatin powder

Instructions

  1. In a large mixing bowl, combine butter, extract, corn syrup, sugar, and gelatin. The dough will be crumbly.
  2. Using your hands, pinch about 2 teaspoons of dough and work it into a ball. Place on parchment paper.
  3. Repeat until all dough has been rolled. Dip tines of fork in powdered sugar and flatten each mint with a fork.
  4. All the mints to set at room temperature for about 3 hours, to become firm.

Notes

  • Store in airtight container at room temperature. Or refrigerate and enjoy chilled.
  • The dough will be crumbly when you mix the ingredients together.
  • Use your hands to roll the dough into balls. The warmth of your hands will help the dough stay together.
  • Dip the fork in powdered sugar before using it to flatten the mints. This will help prevent the dough from sticking to the fork.
  • Let the Strawberry Mints set at room temperature for at least 3 hours before you eat them.
  • Give these as a gift or party favor in a cute jar with a ribbon. Wonderful for Valentine's Day!
