Slow Cooker Chipotle BBQ Pork

Put everything in the slow cooker and walk away until meal time. Slow Cooker Chipotle BBQ Pork sandwiches go straight from slow cooker to the dinner table. This is a kid approved dinner that the whole family loves.

Ingredients

  • 1 can (15 ounce) tomato paste
  • ½ cup light brown sugar, packed
  • ⅓ cup white vinegar
  • ½ teaspoon black pepper
  • 1 Tablespoon lemon juice
  • 4 chipotle peppers in adobo sauce
  • ½ teaspoon kosher salt
  • 3 pound pork sirloin tip roast
  • 1 can (15 ounce) sliced peaches, drained
  • 8 pretzel buns

Instructions

  1. In a food processor or blender, pulse the tomato sauce, sugar, vinegar, pepper, lemon juice, chipotle peppers, and salt until finely blended.
  2. In a large crockpot, add the pork roast. Pour the blended sauce over the roast. Cover the crockpot and cook on low for 6-8 hours.
  3. When ready to eat, shred pork with two large forks. Pour in can of sliced peaches.
  4. Serve with pretzel rolls or corn muffins. ENJOY
