White Chocolate Peanut Butter Cookies

White Chocolate Peanut Butter Cookie cups with a White Chocolate Reese's cup tucked inside. Chocolate- check. Peanut Butter- check! Sprinkles- check!

Ingredients

  • 1 ¼ cup unsalted butter, melted
  • 2 cups light brown sugar, packed
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 Tablespoon vanilla extract
  • 4 ¼ cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons cornstarch
  • ½ teaspoon kosher salt
  • 1 package (12 ounce) white chocolate morsels
  • 1 package (10 ounce) peanut butter morsels
  • 48 miniature white chocolate Reese's peanut butter cups
  • sprinkles, optional

Instructions

  1. In a mixer, blend melted butter with sugars for 2 minutes until fully combined. Add eggs, on at a time. Add vanilla.
  2. Add flour, baking powder, cornstarch and salt and mix until combined. Fold in white chocolate morsels and peanut butter morsels.
  3. Drop by large tablespoon into a well greased mini muffin tin. Bake in a 375 degree oven for about 10-12 minutes. Remove and press an unwrapped Reese's cup into the cookie. Add sprinkles immediately. Allow to cool in pan about 10-15 minutes. Remove and cool completely on wire rack.
  4. Store in an airtight container for up to one week.
