Grasshopper Cupcakes

Rich chocolate cupcakes topped with a creamy Mint whipped cream frosting . So light, so refreshing, Grasshopper Cupcakes are the perfect after dinner treat!

Ingredients

  • 12 chocolate cupcakes
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • ½ teaspoon mint extract
  • 3 drops green food coloring
  • 2 Tablespoons chocolate syrup (garnish)
  • 6 Andes chocolate mint candies

Instructions

  1. In a large mixing bowl, beat heavy cream with a whisk (attached to a stand mixer or a handheld electric mixer) for 2-3 minutes until thickened. Slowly beat in the powdered sugar, mint extract and green food coloring.
  2. Beat an additional 2-3 minutes until desired consistency.
  3. Frost cupcakes, cake or brownie and drizzle with chocolate syrup. Top with mint candies.

Notes

  • Tip 32 was used to frost cupcakes in photo above. Recipe will frost 12 cupcakes, one 13x9 pan of brownies or a 2 layer 8 inch cake.
  • Use a half batch of my chocolate cupcake recipe (or double the frosting for 24 cupcakes).
