Wash the potatoes thoroughly. For best flavor, do not skip this step. Use a potato scrubber or washcloth to really get the extra dirt off.
Place a trivet inside the pressure cooker. Add 1 cup of water. Place the potatoes on the trivet, stacking them if necessary. Secure the lid and make sure the valve is set to "SEALING."
Select "HIGH PRESSURE" with a cook time of 18 minutes.
When the cook time ends, allow the pressure to naturally release for 15 minutes.
Release pressure and remove potatoes from Instant Pot. Serve and enjoy.

If you’re using russet potatoes you can cook them the same way! You can also cook a combination of potatoes.
