Layer half of the taco meat mixture on top of the Doritos in the casserole dish.
Layer half of the shredded mexican cheese on top of the taco mixture.
Repeat steps 2-5 once more.
Bake for 20 minutes covered with foil, then uncover and bake for an additional 10 minutes. Serve hot with sliced green onions if desired.
Notes
Use a 2 quart baking dish for today's casserole.
You can use your favorite flavor Doritos, such as Spicy Nacho, Cool Ranch, etc.
Shredded cheddar cheese can be used in place of Mexican.
If you are not using crockpot taco meat, you can cook 1lb of ground beef until browned then add in 1 packet of taco seasoning and 8 to 12 ounces of salsa and cook over low until thickened, then continue with the rest of the recipe.
Feel free to top and serve with other toppings such as shredded lettuce, avocado, etc.
The Doritos maintain some crunchiness while baking, don’t break them down too much, just enough to keep the layer sort of flat.
