24ouncesfresh salmon, cut into 4 filets of 6 ounce each
¼teaspoonkosher salt
¼teaspoonblack pepper
Instructions
Preheat the oven to 425 degrees F.
In a bowl, combine bruschetta ingredients. Stir to combine and cover with plastic wrap. Refrigerate until ready to serve.
Add 1 Tablespoon of olive oil to the bottom of an oven safe skillet (or baking dish). Place salmon filets into the dish, skin side down (if they have skin).
Drizzle 1 Tablespoon of olive oil over the top of the salmon and season with salt and pepper.
Bake salmon for 12-15 minutes until salmon reaches desired doneness (internal temperature should be 140 degrees F). It should flake easily when done.
Add bruschetta topping and serve immediately.
Notes
Cooking time will vary depending on the thickness of the salmon portions.
You can make the bruschetta topping up to 24 hours in advance.
