Grab a pint sized mason jar with a lid (wide mouth jar preferred). Add all four ingredients and secure the lid tightly.
She the jar vigorously for about 5 minutes. Freeze ice cream for at least 4 hours or overnight. Grab a spoon and enjoy!
Notes
Sweetners- swap out the monk fruit and use 1/4 cup powdered sugar for a regular ice cream. You could also swap out monk fruit for 2 Tablespoons of stevia if you prefer. I usethese monk fruit sweeteners in my sugar free recipes. They are zero calorie, zero carb and completely natural.
Vanilla Extract- use pure vanilla for best flavor. A vanilla bean paste would be fantastic here instead!
Softer Ice Cream- for a softer ice cream, add up to 1 Tablespoon of Vodka. This helps the ice cream stay soft serve in the freezer.
Change up the flavor- Add in 2 Tablespoons freeze dried strawberries (that have no added sugars) to create a delicious flavor. Use 2 teaspoons unsweetened cocoa powder to give your ice cream a chocolate flavor.
Storage- Keep mason jar ice cream in the freezer for up to one week for best flavor.
