In food processor, puree the beans, red peppers, tahini, lemon juice and seasonings. Process until smooth and slightly fluffy. Add in olive oil and process until well blended.
Refrigerate at least one hour before serving, sprinkle with parsley.
Notes
Garbanzo Beans (Chickpeas): If using dried garbanozo beans, you'll have to soak them and cook them. Canned garbanzo beans are convenient and easy to use. Peeling the garbanzo beans is not necessary, especially if using a high powered blender or food processor. However, we love to peel the to create an extra smooth hummus.
Store your hummus in an airtight container in the refrigerator and it should stay fresh for about one week.
Freezing hummus can be done if you store in an airtight, freezer safe container. For best flavor, store for up to 30 days, thaw in refrigerator overnight. You may need to stir or re-blend before serving.
