Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper. Set aside.
In a mixing bowl, combine cake mix with thawed cool whip and one egg. Beat until well combined.
Using a medium cookie scoop, scoop out Tablespoon sized cookie dough balls. Roll in powdered sugar and place on prepared baking sheet.
Bake cookies in preheated oven for 12-15 minutes. Remove and cool on pan for 5 minutes, then cool completely on wire cooling rack.
Notes
Similar to our easy cake mix cookies, you can swap out the flavor of cake mix to create a whole new treat! Chocolate, strawberry, and lemon were our favorites!
Cookie dough will be soft and the consistency of playdoh.
Store cooled cookies in airtight container in the refrigerator. These will stay fresh for about 3-4 days.
Freeze cookies in airtight container for up to 3 months.
