Lasagna Soup brings all the good taste of lasagna together in a simple, hearty bowl of soup. Hearty and packed with pork, tomatoes, and fragrant herbs!
In a large soup pot, brown ground pork with onion, green pepper and garlic. Add chicken broth, tomatoes, tomato sauce, and seasonings. Bring to a boil over medium high heat. Boil 2 minutes, then reduce to a simmer and cook for 30 minutes, covered. Stir occasionally.
Add bite sized lasagna noodles to soup and cook until tender (about 15 minutes).
When ready to serve, mix in the grated parmesan cheese. Ladle into individual bowls and sprinkle with shredded mozzarella cheese. We served our soup with crunchy sourdough bread crisps! ENJOY

When it comes to lasagna soup, lasagna noodles are the obvious choice. Either no-boil or regular lasagna noodles will work just fine. Break them into pieces about 2 inches long before adding them to the pot.
That said, if you don’t have lasagna noodles around, you can certainly use other types of noodles. Just be sure to check the pasta frequently as it cooks to avoid overcooking.
Lasagna soup stores well in the fridge for a couple of days.
Store this soup in an airtight container (or in freezer bags) in the freezer, then thaw at room temperature before reheating on the stove or the microwave.
