Place roast in bottom of pressure cooker. Top with seasonings and beef stock. Secure lid and move valve to sealing.
Start pressure cooker on manual or pressure cook for 60 minutes. Allow to naturally release an additional 20 minutes.
Once timer is done, quick release and open lid. Remove beef and slice or shred. Save liquid and use for dipping sandwiches (au jus).
To assemble sandwiches, place french dip meat on french roll and top with provolone cheese. If desired, heat under broiler for a few minutes to crisp bread and melt cheese. Dip in au jus and enjoy.

Notes
This makes A LOT of beef, so be ready to serve a crowd.
This recipe was tested in a 6-quart Instant Pot. You'll need to make sure your cut of beef will fit in your Instant Pot.
You can swap in 1 cup of red wine or a very dark beer in place of 1 cup of the beef stock to add an extra layer of flavor.
You can shred the cooked beef with two forks - it should be very tender and come apart easily - or you can slice it with a knife. Whichever way you prefer!
Provolone cheese is classic for these sandwiches, but you could also swap in some cheddar cheese if you prefer.
