Avocado Chicken Salad Recipe
Ingredients
- 3 slices bacon, cooked and crumbled
- 2 cups cooked, shredded chicken
- 2 avocados, diced
- ¼ cup red onion, diced
- 2 Tablespoons cilantro, snipped
- 1 teaspoon garlic salt
- ¼ teaspoon black pepper
- 3 drops hot sauce, any variety
- ¼ cup mayonnaise
- 1 lime, juiced
Instructions
- In a bowl, combine cooked bacon and chicken with avocado, onion, cilantro, garlic salt, pepper, and hot sauce.
- Mix until combined. In a small bowl, whisk mayonnaise with lime juice. Fold into the chicken salad and mix until blended.
Notes
- Use my recipe to make shredded chicken, or pick up a rotisserie chicken to make this dinner or lunch easier.
- Serve chicken salad with croissants, crackers, or on a bed of spring mix to make a salad.
- For a chunkier salad, add the avocado last so it remains cubed, not blended.
- For a heartier, chunkier salad, add 1/2 cup corn and 1/2 cup black beans.
- For a spicier salad, add 1 seeded and diced jalapeno.
