If you’re looking for a fun, simple ice cream recipe, this Mason Jar Ice Cream has been made for generations. Only four ingredients, and sugar free options too!

Aimee’s Recipe Notes
Taste & Texture: creamy vanilla ice cream!
Tools Needed: Just a wide mouth mason jar and lid. Plus a little muscle to shake.
Prep Note: this ice cream needs to freeze for at least 4 hours. I like to make it the night before so it sets up perfectly.
Top Tip: I love using Besti sweeteners. They don’t leave the cooling aftertaste like other brands!
Just Four Ingredients
Be sure to scroll down to the recipe card for complete ingredients list and measurements.
- Heavy Whipping Cream- this full fat cream creates the perfect texture for today’s sugar free ice cream.
- Powdered Sugar- use regular confectioner’s sugar, or make it sugar free and use powdered monk fruit or Stevia.
- Vanilla- I prefer using pure vanilla extract. But for an even richer flavor, use vanilla bean paste!
More Flavor Options
Strawberry- use a no sugar added freeze dried strawberry in this ice cream. Pulse the freeze dried strawberries a couple times (keeping some chunks) and shake it into the cream.
Chocolate Chip- if keeping this ice cream sugar free, add some sugar free chocolate chips (or regular if that’s your thing). I love using Lily’s Chocolate chips!
Chocolate- love chocolate? Add 2 teaspoons unsweetened cocoa powder to the cream and shake. Drizzle with sugar free chocolate syrup when serving.

Ingredients
- 1 cup heavy whipping cream
- 2 Tablespoons powdered monk fruit sweetener
- 1 teaspoon vanilla extract
- ⅛ teaspoon kosher salt
Instructions
- Grab a pint sized mason jar with a lid (wide mouth jar preferred). Add all four ingredients and secure the lid tightly.
- She the jar vigorously for about 5 minutes. Freeze ice cream for at least 4 hours or overnight. Grab a spoon and enjoy!
Notes
- Sweetners- swap out the monk fruit and use 1/4 cup powdered sugar for a regular ice cream. You could also swap out monk fruit for 2 Tablespoons of stevia if you prefer. I use these monk fruit sweeteners in my sugar free recipes. They are zero calorie, zero carb and completely natural.
- Vanilla Extract- use pure vanilla for best flavor. A vanilla bean paste would be fantastic here instead!
- Softer Ice Cream- for a softer ice cream, add up to 1 Tablespoon of Vodka. This helps the ice cream stay soft serve in the freezer.
- Change up the flavor- Add in 2 Tablespoons freeze dried strawberries (that have no added sugars) to create a delicious flavor. Use 2 teaspoons unsweetened cocoa powder to give your ice cream a chocolate flavor.
- Storage- Keep mason jar ice cream in the freezer for up to one week for best flavor.
You recipe says to put the ingredients in the mason jar and shake, freeze for at least 4 hours. I am assuming once I shake the ingredients I have to find another container to freeze the ice cream? Won’t the mason jar break if it stays in the freezer ?
You can freeze mason jars.
Made this last night and swapped whiskey instead of vodka for a softer ice cream. So easy and so delicious!
To keep it more of a soft serve consistency, can I use bourbon rather than vodka?
