Bruschetta Salmon Recipe
Ingredients
For the Bruschetta Topping
- 1 Tablespoon olive oil
- 1 Tablespoon white balsamic vinegar
- ¼ cup chopped red onion
- 2 cloves garlic, finely chopped
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ cup fresh basil, cut into thin strips
- 3 roma tomatoes, chopped
- 1 avocado, pitted and diced
For the Salmon
- 2 Tablespoons olive oil
- 24 ounces fresh salmon, cut into 4 filets of 6 ounce each
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
Instructions
- Preheat the oven to 425 degrees F.
- In a bowl, combine bruschetta ingredients. Stir to combine and cover with plastic wrap. Refrigerate until ready to serve.
- Add 1 Tablespoon of olive oil to the bottom of an oven safe skillet (or baking dish). Place salmon filets into the dish, skin side down (if they have skin).
- Drizzle 1 Tablespoon of olive oil over the top of the salmon and season with salt and pepper.
- Bake salmon for 12-15 minutes until salmon reaches desired doneness (internal temperature should be 140 degrees F). It should flake easily when done.
- Add bruschetta topping and serve immediately.
Notes
- Cooking time will vary depending on the thickness of the salmon portions.
- You can make the bruschetta topping up to 24 hours in advance.
- Serve salmon with rice, pasta or caesar salad.
