Bruschetta Salmon Recipe

This Skillet Bruschetta Salmon recipe is ready in 30 minutes. Fresh and flavorful, dinner is easy and delicious.

Ingredients 

For the Bruschetta Topping

  • 1 Tablespoon olive oil
  • 1 Tablespoon white balsamic vinegar
  • ¼ cup chopped red onion
  • 2 cloves garlic, finely chopped
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ cup fresh basil, cut into thin strips
  • 3 roma tomatoes, chopped
  • 1 avocado, pitted and diced

For the Salmon

  • 2 Tablespoons olive oil
  • 24 ounces fresh salmon, cut into 4 filets of 6 ounce each
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions 

  • Preheat the oven to 425 degrees F.
  • In a bowl, combine bruschetta ingredients. Stir to combine and cover with plastic wrap. Refrigerate until ready to serve.
  • Add 1 Tablespoon of olive oil to the bottom of an oven safe skillet (or baking dish). Place salmon filets into the dish, skin side down (if they have skin).
  • Drizzle 1 Tablespoon of olive oil over the top of the salmon and season with salt and pepper.
  • Bake salmon for 12-15 minutes until salmon reaches desired doneness (internal temperature should be 140 degrees F). It should flake easily when done.
  • Add bruschetta topping and serve immediately.

Notes

  • Cooking time will vary depending on the thickness of the salmon portions.
  • You can make the bruschetta topping up to 24 hours in advance.
  • Serve salmon with rice, pasta or caesar salad.
