Why this Soup is Best

This Lasagna Soup surpassed my expectations.

My husband does not like lasagna. The ricotta cheese is the main culprit. I was a little worried about making lasagna soup without ricotta, but it went over quite well!

Don’t worry cheese lovers: this soup still has all the wonderful cheesiness you love in a good lasagna!

  • Instead of ricotta, I mixed grated parmesan into the warm soup and sprinkled shreds of mozzarella on top.
  • The flavorful pork simmered with tangy tomatoes, fragrant garlic, and all the Italian herbs I adore made for one tasty soup. 
  • Lasagna Soup is easy enough for a weeknight meal but definitely impressive enough to serve to dinner guests!
  • Everything in this soup comes together in one pot without any fuss and very little clean up.

Ingredient Notes

Ingredients needed to make lasagna soup.

I make my Lasagna Soup with ground pork. This gives it a hearty authentic flavor. Ground beef works well too.

  • Tomatoes, green peppers and onion add flavor and texture to this soup.
  • Spices. Dried basil, Italian seasoning, garlic salt, and crushed red pepper flakes add delicious flavor.
  • Cheese. Shredded mozzarella and parmesan are the perfect duo. If you love ricotta you can add it to the soup with the parmesan if you want.
  • Pasta. I use traditional lasagna noodles in this recipe, but feel free to swap them for rotini, penne, or your favorite shape!

Easy Instructions

To make this soup, start by browning ground pork in a soup pot along with onion, green pepper and garlic. Add the tomatoes, chicken broth, and Italian seasonings then simmer everything for a half hour.

Break the lasagna noodles into bite sized pieces and add them to the soup pot. Continue cooking the soup along with the noodles for another 15 minutes, or until the noodles are tender.

Before serving the soup, I mixed grated parmesan cheese into the pot. The soup will soften and melt the cheese perfectly!

After ladling the soup into bowls, top with the shredded mozzarella cheese and enjoy.

What to Serve with Lasagna Soup

We loved bowls of Lasagna soup with sourdough bread crisps for dunking.

It would also pair perfectly with slices of crusty Italian bread or your favorite dinner rolls. Next time I make it, I may try topping it with large croutons ala French Onion Soup!

This soup is definitely hearty and filling enough to serve as a full meal all on its own. Served in smaller cups, it would make a great accompaniment to any Italian meal, too.

We also love a fresh copycat Olive Garden salad. A thick slice of homemade bread and we’ve got a complete meal.

Tips and Tricks

  • Whether you’re a fan of lasagna or a lasagna skeptic, like my husband, you’re going to love this herby, garlicky pork soup!
  • When it comes to lasagna soup, lasagna noodles are the obvious choice. Either no-boil or regular lasagna noodles will work just fine. Break them into pieces about 2 inches long before adding them to the pot.
  • That said, if you don’t have lasagna noodles around, you can certainly use other types of noodles. Just be sure to check the pasta frequently as it cooks to avoid overcooking.
  • Lasagna soup stores well in the fridge for a couple of days.
  • Store this soup in an airtight container (or in freezer bags) in the freezer, then thaw at room temperature before reheating on the stove or the microwave.

Ingredients 

  • 1 pound ground pork
  • ½ cup diced yellow onion
  • 1 green pepper seeded and diced
  • 4 cloves garlic pressed
  • 1 carton chicken broth 32 ounce
  • 1 can diced tomatoes 14.5 ounce
  • 1 can tomato sauce 15 ounce
  • 1 Tablespoon Italian seasoning
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon garlic salt
  • ¼ teaspoon crushed red pepper
  • 1 teaspoon dried basil
  • 8 lasagna noodles broken into bite sized pieces
  • ¾ cup parmesan cheese grated
  • 1 ½ cup mozzarella cheese shredded

Instructions 

  • In a large soup pot, brown ground pork with onion, green pepper and garlic. Add chicken broth, tomatoes, tomato sauce, and seasonings. Bring to a boil over medium high heat. Boil 2 minutes, then reduce to a simmer and cook for 30 minutes, covered. Stir occasionally.
  • Add bite sized lasagna noodles to soup and cook until tender (about 15 minutes).
  • When ready to serve, mix in the grated parmesan cheese. Ladle into individual bowls and sprinkle with shredded mozzarella cheese. We served our soup with crunchy sourdough bread crisps! ENJOY

I found this recipe with looking for ideas for leftover lasagna!  I’m thinking of cutting up the lasagna into bite size pieces & adding chicken or beef broth with it in my crock pot!   My lasagna is basically veggies with a half pound of cooked ground sausage, & I always replace the ricotta with cottage cheese. Cottage cheese is healthier, & half the price!  My family never even noticed this change!  They still love it!

  5. In Italy doesn’t exist anything like that.
    The original real Italian lasagna is made up of pasta, ragù bolognese, Italian parmesan and bechamel and nothing else.
    This is a simple soup with meat and tomato.
    Sorry for this clarification.

  6. I sometime make my lasagna with sausage and sometimes with ground beef. Would using beef broth with ground beef be an acceptable substitution?

  7. I made this tonight and my husband and I both LOVED it. It is a bit messy to eat with the melted mozzarella. My husband (who used to work in a pizza shop) suggested provolone cheese because it’s not as messy. I may try that with the leftovers – just lay a slice across the top of the bowl!

  8. Looks delicious. I will have to try this for dinner(maybe add cream cheese). If your husband likes cream cheese you should try that in you lasagna. My mom and grandma have been making their lasagna with cream cheese instead of ricotta.

  10. This recipe was very good. Some changes I am making for the next time I make this… Going to go half pork burger/Italian sausage. I’m also going to use bow-tie noodles, or elbow. Breaking the lasagna was a mess, so I will be skipping that part for sure.

  11. I’m Australian and had never had lasagna with ricotta/cottage cheese until recently. We always made it with béchamel sauce (think white sauce with cheese) which is quite different to the ricotta versions. Maybe your husband would like this version.

  13. This is the best soup! My husband & I love it. I have 15 family members coming on Sunday that all want to try this soup. I’m excited to see how they like it. I’m going to need a huge pot as I’m going to have to triple the recipe. Trying to figure that out as I don’t have anything bigger than 6 qt. pots. Thanks for a fabulous soup recipe.
