Chocolate Chip Cookie Sandwiches with creamy Mint filling is the perfect dessert after any meal!

Something really sweet happened to us this week. You know how you watch the news and all you ever hear is bad stuff? Well, I’ve got a nice story for you.
Sunday night, after being at a swim meet all weekend, a snow storm hit. The last thing I wanted to do was go outside and shovel snow. The last thing my husband wanted to do was go outside and shovel snow. We were both exhausted from our separate weekend activities (mine was sitting on a bleacher for hours on end, his was taking care of the house and kids for the entire weekend).
Just before bed, as we looked out the window to see how much snow had fallen, there were 4 people in our neighbors’ driveway, with shovels. These 4 snow angels (as my husband refers to them), shoveled every house and sidewalk in our court during the night. We don’t know who they were, we didn’t recognize them. They didn’t ask for money. The just went from house to house, shoveling snow. I have no idea how many driveways they did, if it was just our court….or more in the neighborhood.
What I do know is during our extreme exhaustion, there was a light. A break. A relief! There is so much more good in the world, good that tends to get over looked by the bad. Good that doesn’t get the attention that the bad gets. So today, let’s talk about the good!
Today’s recipe is not only good, it’s great! I used Pillsbury Chocolate Chip Cookie dough (in the rolls) to make this recipe even easier. Everyone needs some time saving steps every once in awhile. I used a 1 tablespoon scoop and made mini cookies.
I then whipped up a batch of creamy Mint buttercream frosting. When the cookies were cooled, I piped a little frosting between two like-sized cookies. Oh my word these are delicious.
I thought I was done. But then it occurred to me, St. Patrick’s Day is coming soon! These would be a fun treat to share. I mean, if you have a green cookie sandwich in hand, you won’t be pinched, right? So I dipped each of these cookies in some melted vanilla Candiquik (vanilla bark, almond bark, white chocolate…all would work just fine) and I added some festive sprinkles! The vanilla Candiquik sets up in minutes so they were ready to eat by the time I was done dipping the last set of cookies!
I wish I had some of these cookie sandwiches left to share with those snow angels.
