I get questions all the time by email about what kind of pans I use to cook and bake. What brand cookie sheets do I use. What type of cupcake liners do I buy.
And for many many years (at least 15) I have been using stoneware cookie sheets to bake my cookies. I was introduced to them years ago at a Pampered Chef party, and had been a loyal fan forever. Notice I said “had”???
Yep. It’s true. I’ve been converted. I was asked by Heirloom brand Cookie Sheets to review one of their Heavy Duty Stainless Steel cookie sheets. So, I did what any baker would do, I tested it out. Using half the dough on my tried and true stoneware and half the dough on these cookie sheets, I went to baking some delicious lemon cookies.
And guess what? They baked up identically. Seriously. That never happens. Usually with a metal sheet the bottoms brown faster. Nope. Not this time. Identical. So here’s the thing. My stoneware baking sheets are HEAVY. And not too versatile. These Heirloom cookie sheets are fantastic.
And my husbands favorite part? They can go in the dishwasher. Yep. Tried it. Works. Clean and shiny with no scrubbing. They store a little easier than my heavy stoneware too.
Now, I just need to get more of them, one cookie sheet is not enough for this girl.

Before we get to the giveaway though, let’s talk about the cookies I baked. Lemon Crunch.
Why the crunch? Well, I added Lemon Oreos. You heard me right. Amazing little cookies. Oreo pretty much is a genius cookie maker. I also added in some Sugar Free JELL-O lemon gelatin (which keeps these soft and chewy). So yes. Chewy cookies with a crunch. It’s really the best of both worlds!
**if you can’t find the Lemon Oreos, substitute any lemon sandwich cookie instead. And cry just a little bit. Then eat a cookie and feel better!
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 pkg (0.3oz) Sugar Free JELL-O lemon gelatin mix
- 1/2 tsp kosher salt
- 2 eggs
- 1 Tbsp vanilla extract
- 2 cup all purpose flour
- 1 tsp baking soda
- 14 lemon Oreos (or lemon sandwich cookies), chopped
- 1 bag (12oz) white chocolate morsels
Instructions
- In mixing bowl, beat butter with sugars. Add in JELL-O mix, salt and eggs, mixing until completely combined.
- Add in vanilla. Add flour and baking soda, mix completely. Fold in chopped cookies and morsels.
- Line a baking sheet with parchment paper. Drop cookie dough by large tablespoon onto cookie sheet. Bake in a 375 degree oven for 10-13 minutes. Remove and cool on wire rack. Store in airtight container for up to one week.

I don’t think there’s a kind of cookie I WOULDN’T bake! I recently had a rocky road cookie with these delicious chewy marshmallow bits – I think those would be my first try. After that – well, I’d methodically work my way through all your recipes of course. (Till I EXPPLOODDDEEE!)

You can! you might lose a little of the lemon flavor but they will still be fantastic (and the JELLO helps add flavor too)!

I make a healthy whole wheat with dried coconut and nuts. Soooo good. You can even add dried fruit. No white flour or white sugar. It has sucanat for the sugar.

Those cookies look DELICIOUS-and so don’t those cookie sheets. The first cookies I would bake on those cookie sheets are the Crunchy Coconut Cookies I grew up with-LOVE those.

Christmas cookies! I have 3 generations worth of traditional cookies to make… My great grandmother’s Pocketbooks, my mom’s mom’s (that looks funny!) What a great cookie sheet. I love my stoneware too but like you say, it’s so heavy, I only use it for special occasions. If I didn’t try out this recipe (I’ve got to find those lemon Oreos) I’d test out our tried and true favorite Chocolate chip cookies.

You can also substitute any brand of lemon sandwich cookies (even Girl Scouts make some too). It’s hard to use anything but stoneware…but I’m telling you these sheets are fantastic!

I just got through popping a sheet of cookies in the oven. I only had 1/4 oz. of jello to put in the cookies so I added some lemon juice and lemon zest. My resident cookie dough eater (my daughter) assured me that the dough tasted great and had enough of a lemon taste. I should be able to judge for myself in 3 minutes. Thanks for the recipe.

Note to self….. don’t eat lemon cookies while they are still warm. I tried them and thought they were just OK. However, after they cooled I tried them again and they were awesome. The first cooled batch lasted about 5 minutes and I had to fight my husband for the last cookie. Thanks again for the recipe.
I have a quick question. When I bought the sugar free gelatin and brought it home I realized that it only contained .30 ozs. so I added some lemon zest and lemon juice. The cookies didn’t last but 1 day so I went back to the store to buy more ingredients to make some more. Am I actually supposed to use 1 oz. of the gelatin (which means I would have to buy at least 3 packages to get close to 1 oz.) or just 1 package of .30 ozs? I can’t find any sugar free gelatin that has 1 oz.
UGH. I am so so sorry. That is totally my typo! You are correct, it is only .3oz pkg of gelatin. I hope it didn’t cause you too much of a headache. Fixing the recipe now!!!
