Cream Cheese Coffee Cake with Cinnamon Streusel and Keurig Giveaway

Thick Cinnamon Coffee Cake has a layer of Cream Cheese and topped with a crunchy Cinnamon Streusel. This coffee cake NEEDS to be made for family and friends. I dare you!

I love coffee. I think I may have mentioned this once or twice on the blog.

I’m not much of a breakfast eater though. Unless of course it involves some sort of pastry or baked good. Then I’m all. over. it.

Today I’ve teamed up with Jocelyn and Keurig to bring you not only this delicious coffee cake recipe, but a giveaway so you can have your own Keurig brewing system.

I LOVE my Keurig. Here’s how far my addiction to coffee goes. Sometimes, while my pot of coffee is brewing in the morning, I’m too impatient so I make myself a delicious cup of coffee in my Keurig while I wait. Yep, I’ve done that.

But my favorite way to use my Keurig is for my afternoon coffee. Around 2pm I start hitting a wall. I’m usually swamped in writing and editing photos. Now that summer is here my schedule has changed. You can now find me sitting outside reading a book while my kids are playing with friends, or working in my garden, or lounging at the pool. All of these activities REQUIRE coffee. Iced coffee. You know, cause it’s summer.

Did you know you can brew Iced Coffee in your Keurig? Fill a big cup with ice and use the special Iced Coffee k-cups. My favorite is the Donut Shop Sweet & Creamy. Not only does this coffee cake have a moist texture, but I’ve added in a layer of cream cheese (don’t question my decisions!) and topped it with a generous helping of cinnamon streusel. The streusel is very necessary. Yes? Are we in agreement here?

Cream Cheese Coffee Cake with Cinnamon Streusel

Prep Time: 20 minutes

Cook Time: 40 minutes

Yield: 16 servings

Ingredients

    For the Cake:
  • 2 1/2 cup all purpose flour
  • 1 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp kosher salt
  • 3/4 cup unsalted butter, softened
  • 3 eggs
  • 2 tsp vanilla extract
  • 2/3 cup buttermilk
  • For the Filling:
  • 2 pkg (8oz each) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 egg
  • For the Streusel:
  • 1 cup light brown sugar
  • 1/3 cup granulated sugar
  • 2 tsp ground cinnamon 1/4 tsp kosher salt
  • 1 cup unsalted butter, melted
  • 3 cup all purpose flour

Instructions

  1. For the cake, grease and flour a 13x9 baking dish and set aside. In a mixing bowl, beat flour, sugar, baking powder, baking soda and salt on low until combined. Beat in softened butter until mixture is crumbly. Add in eggs, vanilla and buttermilk and beat until fully combined and fluffy! Pour half the batter into baking dish, spreading evenly.
  2. In a separate mixing bowl, beat cream cheese with sugar and egg until light and fluffy, about 3-5 minutes. Pour over batter. Top with remaining half of cake batter.
  3. For the topping, mix sugars with cinnamon and salt. Add in butter and combine fully. Add flour and mix with hands until fully combined. Pour crumb topping over batter, sprinkling with hands until evenly distributed.
  4. Bake cake in a 325 degree oven for about 45 minutes, until fully cooked. Cool completely and serve.

I think I just gained 80 pounds from the photos :) I would LOVE to have a Keurig – our current coffee system works fine for now, but it’s SUPER old and could bite the dust any day. I’d love to have something more new and modern and easy to use!

I love coffee and my Keurig. I make espresso using my k-cup, and I make a latte every day. I have to have two coffees a day or it isn’t a day. I’m a sucker for cream cheese filling (as my latest post proves), so this looks like my kind of coffee cake! I do like breakfast. I’d gobble this up!

I work as a Registered Nurse on the night shift. Coffee is my friend. My bestest friend. I would love to become just as spoiled at home as I am at work by having my very own magical coffee machine to make coffee, iced coffee, hot tea, cider and cocoa. Not that I would make the cider often, but I could if I had a Keurig! (A few of our doctors gave our unit a Keurig for Christmas. We love our doctors!)

I know what you mean about coffee…I can drink eat it all day, everyday. It can be cold, hot, iced, microwaved after the coffee maker has shut off. I don’t care, but a Keurig would help me to have more of a QUALITY addiction. Now on to that scrumptious coffee cake…I am making it for my neighbor Margret who by the way turns 96 tomorrow and LOVES sweets. She no longer bakes and loves homemade goodies, and she too is a coffee drinker.

Did I miss something in the streusel directions? I dont’ see anything about adding the three cups of flour.

Ahhh, thanks for the catch. All fixed in the recipe! I think blueberries would be delicious, I would coat them in some flour before adding to the batter so they don’t sink to the bottom. Let me know how it turns out!!!

I love caramel coffe in the Keurig. But summer is the time for iced coffee. I’ve been enjoying it at the office. I have a bottle of syrup behind my monitor. Don’t want visitors to think I’ve got a bottle of something else that I’m adding to my coffee. But I’ve never tried the Keurig iced coffee. I would like to soon.

This recipe has been very duly marked. I have so much trouble finding cake recipes that don’t either shrivel up or stay a gooey mess in my extremely tempermental oven–fingers crossed, because this looks really heavenly! Especially loving that layer of cream cheese…

I have been admiring this for a long time. I would love to have my morning coffee, french vanilla is my favorite but would love to try all the flavors i just can’t get with my regular coffee maker. It would also be great for my son’s cocoa and he could do it himself without making such a mess :-).

I made the coffee cake this evening. Will try it in the morning. It did take longer than 45 minutes. I am using an electric oven abd wonder if the next time try it at 350 degrees instead of 325.

I made this recipie last night and all I’ve heard today is people raving about it. I highly recommend this recipie. The only thing I changed was I added an extra stick of butter to the crumble. How could more butter possible be bad!?!

I made the coffee cake and had to cook an extra 45 mins to get. It done @325 good thing I tested it .so cook it for 1hr and 30 mind @ 325

Hi Shugary Sweets!

Tried this recipe last evening.. Halved the recipe and skipped the filling altogether..Kept the streutsel layer thin.. baked for 40 mins at 350 F… and voila!!

Very happy with the result.. thank you…
