I’ve always believed birthdays deserve more than cake. I mean, I do love cake (and frosting), but there should be another option.

My family LOVES biscotti. So why not start the day with this easy birthday treat. Serve it up with a hot cup of coffee or hot cocoa.

Most people have this idea that biscotti is hard to make, but they are surprising easy.

These birthday cake biscotti have that classic crunchy texture, but with all the fun of a slice of birthday cake.

Biscotti Ingredients

This biscotti dough starts with a simple mixture of butter, sugar, eggs and flour. Give it a cake batter twist with these other additions:

  • Butter flavoring – This extract gives the biscotti an even richer, more buttery flavor. If you can find “cake batter flavoring” even better!
  • Sprinkles – I used rainbow sprinkles for a festive look! Jimmies sprinkles or round “confetti” sprinkles are perfect.
  • White chocolate wafers – Ghirardelli brand is best. The wafers melt smoothly and set up beautifully on the biscotti.

How to Make Birthday Biscotti

The double-bake method (first as longs, then sliced) dries out the cookies enough to make them perfectly crunchy, ideal for dunking.

Make the Cookie Dough.

  • Mix together the dough ingredients and fold in half of the sprinkles.
  • Shape the dough into two logs and bake for about 25 minutes.

Slice and Dunk.

  • Cut the partially cooked dough into slices and bake again until golden brown on both sides.
  • Dip the tops of cooled biscotti in melted white chocolate. Immediately add the remaining sprinkles on top.

Let the chocolate set for a few minutes, then eat and enjoy!

Birthday Cake Biscotti Recipe

Birthday Cake Biscotti are buttery, crunchy breakfast cookies filled with sprinkles and dipped in white chocolate. This funfetti breakfast cookie is delicious with coffee or giving as a gift.

Cook Time: 45 minutes
Total Time: 55 minutes
Servings: 20 servings

Ingredients 

  • 6 Tablespoons unsalted butter softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon butter flavoring, see notes
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ cup sprinkles divided
  • 6 ounce Ghirardelli white chocolate melting wafers

Instructions 

  • In a large mixing bowl, beat butter and sugar until creamy. Add egg and butter flavoring.
  • Add flour and baking powder and beat until combined. Fold in 2 Tablespoons of the sprinkles.
  • Line a large baking sheet with parchment paper (or a silpat). Divide dough in half and shape into two 10-inch x 2.5-inch rectangles. Use flour on your fingertips to keep dough from sticking.
  • Bake in a 350 degree oven for 25 minutes. Remove and cool 10 minutes. Using a serrated knife, cut each rectangle into 9-10 slices each. Turn each slice onto it's side. Bake an additional 10 minutes. Flip biscotti onto opposite sides. Bake another 8-10 minutes. Remove and cool completely.
  • Once cooled, dip tops of biscotti into melted white chocolate. Add remaining sprinkles immediately.

Notes

  • Can’t find butter flavoring? Swap it out for vanilla extract in this biscotti recipe.
  • Store biscotti in an airtight container at room temperature. Enjoy within 2 weeks. Freeze for up to 3 months.
  • Feel free to use different sprinkle colors for different holidays and occasions!

I think I only first discovered biscotti sometime in high school when my dad brought home some from Trader Joe’s, and when I found out they were cookies that were acceptable for breakfast… Well, I basically fell in love on the spot!     1. Oh it’s seriously so easy! And if you put it in a ziploc bag they last for about two weeks. If they start to get stale, it’s okay, dunk them in the coffee 🙂
