These cookies are awesome. I’m not a big cookie fan. I prefer cake. With extra frosting. In a bowl. With milk. Whoops! Did I just admit I like Cake Soup? Don’t knock it until you’ve tried it.
Back to the cookies. I use my basic chocolate cookie recipe for these, but if you prefer you can substitute mint morsels (it will taste like a chewy girl scout cookie) or peanut butter morsels are delish too! I, however, enjoy the white chocolate chips with the macadamia nuts. Yum.
Did you know that there are different qualities of cocoa? I normally have Nestle cocoa on hand, but I was at Jungle Jim’s and bought Saco Premium Baking Cocoa, 10-Ounce Canisters (Pack of 12)! Oh my, it’s so buttery and rich tasting, and it doesn’t seem to dry out the cookies. I took a chocolate class once and we had used Guittard Cocoa Powder, and that stuff was amazing. However at $15 a canister it’s just not in my price point. I already have to explain to my dear husband how I spent the entire paycheck on macadamia nuts and 25 lbs of flour. Oh, and some expensive vanilla and maple extracts (long john donut recipe coming soon)!!!
