I was recently asked to create some Kit Kat inspired fudge. I’m always up for a good challenge! I have bought wafers online before, but since they aren’t readily available, I wanted to create these with ingredients you can find anywhere! Rice Krispies were meant for this challenge. They are light and airy and create the perfect crunch!

Oh, and today is Valentine’s Day. Since my family has pretty much been enjoying pink desserts and sprinkles for weeks, we have nothing much up our sleeves today. I have one kiddo home sick from school. Another one is going to swim practice tonight. My husband and son are working at the regional swim meet from 5:30-10pm and my youngest daughter has tennis lessons.

So basically, it’s just another Thursday night around here! A Thursday night that calls for a little pick me up, by way of these bite sized treats! I may have a little baggie of them ready in the car to nibble on as I drive all over the Cincinnati area! If you see the lady in the minivan with chocolate all over her face…yep, that’s me! Happy Valentine’s Day, friends!

Copycat Kit Kat Bites

Yield: 96 pieces

  • 3/4 cup unsalted butter
  • 3/4 cup heavy cream
  • 1 1/2 cup granulated sugar
  • 25 regular sized marshmallows
  • 12 oz milk chocolate morsels
  • 1 oz unsweetened baking chocolate
  • 5 cup rice krispies cereal
  • 11 oz butterscotch morsels
  • 1 cup peanut butter morsels

  1. In a large mixing bowl, add marshmallows, milk chocolate morsels and baking chocolate. Set aside.
  2. In a large pot, bring to a boil the sugar, cream and butter (over medium high heat). Once boiling, continue to boil for 4 minutes, stirring constantly. Remove from heat. Pour hot mixture over marshmallows and chocolate. Using an electric mixer, beat until chocolate has melted and mixture is smooth (about 2 minutes).
  3. Melt butterscotch and peanut butter morsels together in microwave bowl for one minute. Stir and heat at 30 second intervals until fully melted.
  4. In a large bowl, combine rice cereal, melted butterscotch and about 1/3 of the chocolate mixture. Mix completely.
  5. In a parchment paper lined 13x9 baking dish, pour 1/3 of chocolate mixture onto bottom, spreading with a knife until bottom of dish is covered. Top with cereal mixture. Press firmly. Pour remaining 1/3 of chocolate mixture over cereal, spreading with a knife. Allow to set up in refrigerator, about 1-2 hours. Remove and cut into bite sized pieces. ENJOY!

Just tonight my husband and I shared a Kit Kate Chunky bar (our substitute for Valentine’s chocolate) :) You kit kat bites look just like that chunky bar. I love that you are using rice krispies for that!

Did anyone else have trouble to smooth out the topping like I did? It gets hard before youu get a chance to smooth out. I tried cold water but that didn’t help much.

These are perfection bites!!…Kit-kats are my French husband’s favorite american candy bar…but it is so difficult to find Rice Krispies…Do you think I could substitute wafers (rectangles with no cream filling) or Gavrotte wafer biscuits ? I am loving this stellar recipe..your creativity stuns! Thank you so much for your generous sharing!

    • posted Apr 18, 2013 at 10:56 am

Hi Donna, you can definitely use wafers, although I would probably layer it like a real kit kat bar. I opted out not going that route because grocery stores tend to not carry them here (in US). But they would be perfect!!

They are little drops of either milk chocolate or semi-sweet chocolate…Nestlé makes a good brand, and you find them in the baking aisle of your grocer’s. They also come in butterscotch and peanut butter flavors. Just look in your grocer’s baking aisle, where they stock chopped nuts, condensed milk, etc.
      Hope this helps :)

Recipe looks great and I enjoy your blog but I have a suggestion. I think it would look nicer with fewer picture. I love recipes with beautiful photos but so many bloggers are loading lots of photos that are basically alike. One lovely photo is wonderful; more if they are significantly different. Too many pics make reading on a mobile device a little difficult. I hope you take this as constructive criticism and keep up the good work.

      Hi Kelley,
Thank you so much for your suggestion! With blogging and pinterest being such a visual place, I like to show my readers several views. I usually try to keep it within 2-3 photos, but yeah, this one was a little excessive!
