Ingredient Notes

Ingredients needed to make strawberry swirl fudge.
  • Strawberry gelatin – You only need 1 Tablespoon of the mix that comes in a packet for this recipe. I use classic strawberry JELL-O powder.
  • White chocolate – Morsels melt beautifully to give the fudge its creamy vanilla flavor base. You can also substitute bars of white chocolate broken into small pieces.
  • Marshmallow creme – Creme or “fluff” gives the fudge its soft texture while still allowing it to firm up so you can slice it with ease. Try using our homemade marshmallow fluff if you can’t find it in the stores.

Step by Step Instructions

Melt butter and sugar. Heat butter, sugar, heavy cream and salt together in a sauce pan, stirring constantly while it boils for 5 minutes.

Add white chocolate and fluff. Use an electric mixer to beat white chocolate and marshmallow creme into the butter mixture until fluffy and combined. Pour half the mixture into a baking dish.

Make strawberry swirl. Add the strawberry gelatin mix to the remaining fudge and beat to combine. Pour the strawberry layer over the vanilla layer and swirl with a knife.

Let set. Leave the fudge at room temperature for at least four hours to set. You can also let it set overnight! Once firm, cut into squares and enjoy out of this world strawberries and cream fudge.

Tips & Tricks

  • Use a stand mixer: To make combining the ingredients easier, place the marshmallow cream and white chocolate morsels in a bowl of a stand mixer BEFORE melting the butter and sugar. Then, once the butter mixture is ready you can pour it right into the same bowl and beat, beat, beat!
  • Fresh fudge: Fudge stays freshest when it’s been recently cut. If you won’t be eating all the fudge right away, store it in a block and cut into squares as needed.
  • Flavors: Feel free to swap out the strawberry gelatin for raspberry or orange for a delicious twist on the fruit and cream flavors!

How long will strawberry fudge keep?

Your homemade fudge will stay good for up to 2 weeks if stored correctly! Make sure it’s kept in an airtight container with a lid at room temperature.

Can you freeze fudge?

Homemade fudge freezes wonderfully. Store it in a freezer safe container with parchment paper between layers. Thaw overnight in the fridge or on the counter top for a couple of hours.

Do I need a candy thermometer to make fudge?

This recipe does not require a candy thermometer! Boil the butter, sugar and cream for a full 5 minutes, blend well with the other ingredients and you’ll get fudge with the perfect sweet taste and consistency.

Ingredients 

  • 2 cups granulated sugar
  • ¾ cup heavy whipping cream
  • ¾ cup unsalted butter
  • pinch of salt
  • 11 ounce white chocolate morsels
  • 7 ounce jar Marshmallow creme
  • 1 Tablespoon strawberry gelatin mix

Instructions 

  • In a large saucepan, melt butter with sugar, heavy cream and salt. Cook over medium-high heat until mixture starts to boil. Stirring constantly, boil for 5 minutes.
  • Remove from heat.
  • Using a mixer, beat in white chocolate and marshmallow creme until fully blended and smooth (about 1-2 minutes). Pour half into a parchment paper lined 9-inch baking dish.
  • To remaining mixture, beat in strawberry gelatin mix, 1 minute until smooth. Pour over first layer and using a knife, quickly swirl the two layers together.
  • Allow to set at room temperature for 4 hours or overnight. Cut into bite sized pieces and enjoy!

  1. Hi, this looks awesome! I love to bake, but have never made fudge (it may sound ridiculous, but I had to google up the word “fudge” to know its meaning; in my country the word fudge is  associated with melted chocolate, thats it).
     I’m planning to make this for a cancer awareness activity, but I would like to add some blue swirls on the recipe; so that half the squares come out pink and the others, blue. I was thinking, should I divide the rest of the mixture in two bowls and add 1/2bsp strawberry jello to one, and 1/2 tbsp blueberry jello to the other? Would that work? Or it would be less complicated to make two batches? Thank you!

  7. I plan on making this as a favor at my baby shower next month. I know you have a recipe for orange dreamsicle fudge but do you think I could just substitute orange jello in this recipe instead of strawberry (or any flavor for that matter) and it would still turn out yummy?

  8. I am super keen to make this for a friend’s little girl baby shower but have a couple of questions. I’m in Australia, and I’m not sure we have Marshmallow Creme. What is it & is there a possible substitute? Also, how early in advance could I make it? Does it last a while? (If not eaten beforehand!)

    1. Ok I’ve found Marshmallow Creme here but still wondering how long the fudge will keep? Can I make a week in advance?

      1. Yep, you can definitely make this a week in advance. I would store it in an airtight container in the refrigerator (so it doesn’t get melted and soft).

  10. Does this fudge come out soft and chewy or hard like proper fudge? I made another strawberry and cream on and it was very soft (still yummy though) but yours sounds amazing 🙂

    1. They come out firm. I have other fudge recipes that are much softer, but this one is definitely firm (as fudge should be)!!!! ENJOY!

      1. Well I made them and they didn’t come out hard like proper fudge. Do you think this could have been because I used a bar of chocolate instead of chips? Still tastes good though 😀

        1. Kayleigh, the white chocolate chips have something in them that helps them keep their shape, so it definitely could be why they came out different. Also, making sure you boiled it (at a rolling boil) for the full 5 minutes is important too!! Those are the only two things that can really make a difference in the texture!

    1. No, when you add in the hot ingredients to your mixing bowl the chocolate will melt. I put it on my stand mixer and use the whisk attachement. Takes about 30seconds too a minute.

  12. Well , I was so excited to try this fudge,but, I was so disappointed in it, it tasted good, but I have to eat it with a spoon, it did not firm up as it should , I followed the instructions and boiled it as long as it said to, I won’t be making it again.

    1. I’m so sorry to hear that Jane, I’ve made this fudge and many variations of it with no problems. Besides double checking all ingredients and measurements, without being in your kitchen with you, I’m not sure what help I can offer! I know how frustrating it is though to try and make something and it not work out right.

    2. I had the same problem with this fudge. The upper half with gelatine looks fine and firm, but the white one is not firm at all.
      It also came out too sweet for my taste ( even after I used 1.5 cups of sugar, not 2).
      But it looks very pretty and my kids don’t mind over-sweetness 🙂
