I’ve been challenged to make a healthy version of something, normally, not so healthy. Of course Chicken Salad came to mind. Just because it has the name “salad” doesn’t equate to healthy food. As much as we would love that to be true, right?

Typically a chicken salad is packed with sour cream and/or mayonnaise. I’ve replaced both of those with plain Greek Yogurt. I also added in some heart healthy Fisher Sliced Almonds. A little seasonings, some diced celery and dried cranberries, and you’re well on your way to a delicious lunch or dinner!

I like to serve my chicken salad on a bed of spring greens. However, some people prefer chicken salad in a croissant or on some sliced bread. However you choose to serve it, one thing is for certain. The taste is amazing.

And, as I’ve said, the crunch from the almonds is perfect. I may or may not throw a few extras into my salad (and my mouth)! I love that the Fisher Nuts varieties come in a resealable package too! Perfect for snacking!

Chicken Salad

Yield: serves 4

Prep Time: 10 minutes

Ingredients:

  • 2 cups diced, cooked chicken (about 3/4 lb chicken breasts)
  • 1 cup plain greek yogurt
  • 1 Tbsp lemon juice
  • 1 1/2 tsp dijon mustard
  • 1 tsp garlic salt
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 3/4 cup diced celery (about 3 stalks)
  • 1/2 cup dried cranberries
  • 1/2 cup Fisher Nuts Sliced Almonds

Directions:

  1. In a large bowl, combine diced chicken with yogurt, lemon juice, mustard, garlic salt, salt, pepper and celery.
  2. Fold in the dried cranberries and sliced almonds. Refrigerate until ready to use (this allows the flavors to mingle and combine). Serve on a bed of salad greens or on a sandwich. ENJOY

    I like chicken salad, but usually avoid because of all the mayo. This recipe looks delicious!

    This is how I’ve made my chicken salad for year, minus the dijon mustard. Sometimes I use half yogurt and half mayonnaise and add pineapple tidbits. Delicious!

  4. Looks tasty to me! Love that it’s not as heavy as the traditional sort.
