- Flank steak – Skirt steak could also be used in this recipe.
- Beef broth – Use low sodium broth to control the saltiness of the meat.
- Feta cheese – Goat cheese also tastes good on gyros, or feel free to leave off the cheese if you’re not a fan.
- Pita bread – Whole wheat or white pita pockets taste delicious with the gyro meat.
- Tzatziki Sauce – Made from tangy Greek yogurt, this homemade sauce is best!
Easy Instant Pot Instructions
Season & Sear: Season flank steak with parsley and black pepper, slice into thin strips, and sauté with onions and garlic in the Instant Pot until browned.
Pressure Cook: Add beef broth, red wine vinegar, and lemon juice, scraping up any browned bits. Cook on high pressure for 7 minutes, then allow a 10-minute natural release before quick-releasing any remaining pressure.
Assemble Gyros: Fill pita pockets with cooked beef, shredded lettuce, diced tomatoes, chopped cucumbers, crumbled feta cheese, and a dollop of Tzatziki sauce.
Serving Alternative: For a low-carb option, serve the gyro meat over a bed of mixed greens with the same toppings and pita chips on the side.
Tips & Tricks
- Make the sauce ahead of time – For best flavor, the Tzatziki sauce should be chilled for at least 4 hours before serving. If you don’t have time to wait, don’t worry. The sauce tastes great without the chilling time too!
- Chop your vegetables small – The tomatoes and cucumber should be in bite sized pieces. If they’re too big, it gets difficult to get a bite that has ALL the flavors!
- Gyro salad – Instead of pitas, try serving the gyro strips on a bed of lettuce. Toss with cucumber, tomato, feta and fresh diced red onion then drizzle with sauce and garnish with pita chips!
Serving Suggestions
Wondering what to serve with Gyros? Sweet Potato Fries or Baked French Fries taste great alongside these. If you want even more freshness, I also love Cucumber Dill Salad or Cucumber Tomato Salad on the side.
Don’t forget to put any extra Tzatziki Sauce on the table when you serve your Gyros! It’s so good, you might find yourself wanting more than just a spoonful.

Ingredients
- 1 teaspoon olive oil
- 2 pound flank steak
- 1 Tablespoon dried parsley
- 1 teaspoon black pepper
- 1 medium red onion sliced
- 3 cloves garlic minced
- ½ cup low-sodium beef broth
- 1 Tablespoon lemon juice
- 1 teaspoon apple cider vinegar
- 1 cup shredded lettuce
- 1 cup chopped tomatoes
- 1 cup chopped cucumber
- ½ cup feta cheese
- 4 whole wheat pita breads cut into halves
- 1 cup tzatziki sauce**
Instructions
- Select SAUTE on the Instant Pot and add the olive oil.
- Season both sides of the flank steak with parsley and pepper. Cut the steak into thin strips, going against the grain.
- Add the onions, garlic and steak strips to the Instant Pot. Saute for 1-2 minutes, just until the steak begins to brown and the garlic and onions are fragrant.
- Add the beef broth, lemon juice, and apple cider vinegar to the Instant Pot. Using a wooden spoon, scrape up the browned bits from the bottom of the Instant Pot. This is called deglazing and prevents a burn notice from happening while cooking.
- Put the lid on and lock it in place. Make sure the valve is set to SEALING. Select the MANUAL or HIGH PRESSURE setting and set the cook time for 7 minutes.
- While the steak is cooking, prepare your tzatziki sauce if you haven’t done so earlier.
- When the cooking time has completed, allow the pressure to release naturally for 10 minutes, and then to do a quick release of the remaining pressure by moving the valve on the lid to VENTING.
- For serving, add some shredded lettuce, chopped tomato, chopped cucumber and feta cheese to one half of the pita bread. Add steak and top it with a spoonful of Tzatziki Sauce.
- Store meat and sauce in a covered container in the refrigerator for up to 3 days. Freeze meat for up to 6 months.

Where does the dill go? I’ve read the recipe for the gyros and the sauce and I can’t see where the dill goes?
It’s in the Greek seasoning blend for the sauce.

You could cook (bake) your squash first, steam your cauliflower, then follow the rest of the instructions for assembling the lasagna.
