Mint Chocolate Chip Brownie Bites

There are days when I go a little crazy in the kitchen. When my sweet tooth takes over and I want to bake and eat #allthedesserts.

That happened a couple weeks ago. I had a taste for brownies. Of course, I don’t make just “any brownies,” I create go big or go home brownies.

You may have seen this photo on instagram (do you follow me?). There is so much truth in that one little statement. I have 5 pounds I would love to drop. I’ve been trying to lose it for about 4 years. Ironically, it’s the same amount of time I have been blogging….4 years!

The issue could be my idea of balance. I work out. I eat fairly healthy. But then I have days where I make over a 100 brownies. There are only 6 people in my family, that’s a lot of brownies to consume.

Fortunately I have good friends and neighbors who answer my facebook pleas to come help a girl out!

These brownies start with an easy, from scratch recipe. I use this silicone brownie panthat I bought from Michael’s, but you can also use a mini muffin pan. This recipe will make 48 mini brownie bites (these are small two bite brownies)! You can freeze the brownie after baking them (before frosting them). Wrap them in parchment paper and place in a ziploc freezer bag. Make fresh frosting before serving after the brownie have thawed.

For the frosting, I made a simple buttercream, and added a drop of food coloring. I used Andes Creme de Menthe baking chips in the frosting, and also melted some to drizzle over the tops of these brownies! So so good you guys!!

Mint Chocolate Chip Brownie Bites

Yield: 48 brownie bites

Prep Time: 15 minutes

Cook Time: 12 minutes

Ingredients:

For the brownies:

  • 1/2 cup unsalted butter
  • 1 pkg (12oz) bittersweet chocolate chips (60% cacao)
  • 1 cup granulated sugar
  • 3/4 cup all-purpose flour
  • 3 large eggs
  • 1/2 tsp kosher salt

For the frosting:

  • 1/2 cup unsalted butter, softened
  • 2 cup powdered sugar
  • 2 Tbsp milk
  • 1 drop green food coloring
  • 1 cup Andes creme de menthe baking chips, divided
  • 1/4 cup mini chocolate chips

Directions:

  1. In a large microwave safe bowl, combine the butter with chocolate chips. Heat for one minute on high. Stir and microwave for another 30 seconds. You may need to stir and heat for one more round of 30 seconds until fully melted. Add sugar, flour, eggs and salt. Stirring until well blended.
  2. If using a silicone mold, you don't need to grease it. (If you are using a metal pan, you may want to lightly grease with baking spray). Drop dough by large tablespoons until evenly divided into pan.
  3. Bake in a 375 degree oven for 12-14 minutes. Remove and cool in pan 5 minutes, then cool completely on wire rack.
  4. For the frosting, beat butter for 2 minutes. Add powdered sugar, milk and green food coloring. Beat an additional 3-4 minutes until light and fluffy, scraping down the sides as necessary.
  5. Fold in 1/2 cup Andes creme de menthe baking chips. Pipe onto brownies.
  6. Melt remaining 1/2 cup of Andes baking chips for 30 seconds in microwave. Stir and heat and additional 15 seconds until melted. Spoon into a small plastic bag and snip off the corner. Drizzle over brownies and sprinkle immediately with mini chocolate chips. ENJOY

    These are absolutely delicious. Fortunately, I only had one silicone pan so I had to prepare in two batches. I say fortunately because I had to dig the brownies out with a spoon!

    The next batch, I used spray. They popped right out! It’s my fault though, I had already read that you needed spray with these silicone molds so I should have just listened to my inner voice. I will definitely make again!
